      I’m going to make a ginger mead soon my last batch of mead was such a hit with my family. So I can’t wait to make more.

    I went through something like half a dozen different sugar washes with Lalvin EC-1118 and -every single one- stalled within a day or two. You're right in that it's a better idea to just stick with bakers yeast (Lowans in Australia) if you're keeping your wash around 8-10% ABV. I've also found you can get decent results with Still Spirits Classic 8 turbo yeast - instead of using the entire packet as the directions say, use 1/3 - 1/2 of the packet and use a full 25L of water. I've been getting awesome results with 7kg sugar, 25L total wash, and 1/2 packet of turbo. Much higher ABV tolerance than bakers yeast, and less sensitive to temperature (will ferment just fine at 20C ambient, no need to keep it warm).
    People always hate on turbo yeast, but the harsh headsy flavors typically result from using an entire turbo packet, too much sugar, and not enough water. Halving the packet slows the fermentation, and just dropping the SG a tiny bit (7kg / 25L instead of 8kg / 21L) makes a huge difference.

      Hey BZ, that is very interesting about the Classic 8. Have a Brother who swears by this and uses as directed on the packet. Not my taste preference, but very interested to try it at 1/3 pack. Thanks for the Vid idea.....

    Ironically, alcohol does NOT dissolve sugar well. I would have dissolved the sugar in the water then added it to the alcohol.
