Hi Jill (and Nathan!) We preserve mostly by canning, freezing and drying. We have a built in pantry and the shelves are really deep! A lot of tomatoes are preserved and green beans but we also can soup starts (just add noodles). Our fruits are also preserved by canning - we love to make pear (& apple) butter in the crock pot! Our mulberry, raspberry, peach and blackberry preserves are canned, too. We grow a large amount of herbs, we dry most of them and with the kitchen garden kit from Hoss (we got one after we saw yours!) we now can grow fresh year round. We would love to have a freeze drier but it is just out of our price range. Sorry to be so long winded but you asked! 😊
You should use a coffee grinder/spice grinder makes it super fine.
I found that if I put the fresh kale in a blender with a very small amount of water, not over blending, then squeeze out excess water, I can fit more kale per tray

You can save so much time if you blend your kale in a blender first and add a small amount of water to get it nicely incorporated. Then fill the freeze dryer trays and freeze them. Then after toss into the food processor and you will be able to fit so much more kale in per load. I do this for all items that I will be powdering! Hope this helps!❤️❤️
I love my freeze dryer! I usually pack the trays full when doing kale. You can also blend it up with alittle water and pour it on the trays and freeze. I like to cut mine into big pieces before freeze drying and add it to soups and pasta.

Jill, you mentioned a lot if first time gardners grow food that they then don't eat because they don't know how to cook it. Maybe a project for yiu & the gurls could be you showing the girls (& us, the viewers) how to make it up for eating fresh & for long time storage. A win win situation for all. The girls learn & we would learn.
Considering I never had Kale until my late 40s, early 50s (for that reason), I now have it in salads, in noodle & egg meals a lot. I was in my 30s when I learned about Spinach - we only had store bought canned growing up & I can't stand it that way.
Now I would like to learn more abiut Turnups & Rutabeggas - no one I know eats them & the cost of them in the stores is more than I want to pay as a "learning" project.
Another could be, for those of us with nightshade probles, what to substitute for peppers in recipes. I was just on one "live chat" recently & there were 4 (four) of us with that issue. It makes it interesting trying to find other things to use in there place.
Just a suggestion or two, but maybe something slightly different from other VLOGs.

I think it's so cool Nate is so involved with your cooking and other videos. I wish my hubby was more involved but he works long hours at his job . But I'm grateful he tries to help me when he can. We're going on 60 this year so I am very thankful for every step we can take

I bought an Excalibur food dehydrator. I can either water bath or pressure. My husband bought me a harvest right dryer for our anniversary. I love all of the possibilities.

That looks wonderful! Have y’all ever tried kale chips? So easy cut the heavy stem out then cut or tear the leaves into small pieces mist or toss with EVOO or avocado oil, lightly salt, & generously sprinkle with nutritional yeast. Air fry at 400 degrees for 4 to 6 minutes. I am obsessed with this snack.

I dehydrate Kale and powder it as well! Except I add it to EVERYTHING! It adds the nutrients but you can hide the kale from your kids if they don't like it. I do the same with mushrooms!

Would love to see some cooking videos cooking kale and chard like you were talking about. I have that problem now, growing things that in theory I like, but when it comes down to it I waste a lot because I’m not familiar with it. Kale, chard, radishes, beets.. I grew up with my parents always having a garden so I like most garden veggies and I’m a good cook like my mom so I know how to make things taste good. I think it’s just the initial intimidation of cooking something that I’m not sure how it’s gonna turn out just from not having that familiarity of cooking with it.
I plan on doing some cooking videos soon when we have more produce to harvest. We mainly use kale in smoothies, juices, and chop with salads.
I do not have a freeze dryer, but dehydrate kale and powder or crumble. I put it in everything! My husband things it's parsley or oregano, so does not complain (he's not a fan of kale), LOL
I had never eaten kale before, then from watching Jills videos and Jess also I now sauté mine down in butter then add in scrambled eggs, green onions. It’s my new favorite way to eat eggs. Have a blessed day 🙏🏻🙏🏻🙏🏻💕👩🏻🌾
If you had a VitaMix you can powder everything including the ribs. I burnt up a blender a year before I am going on 21 years with the same VitaMix and this is the first time I have thought of replacing.
I only have a dehydrator- hoping I can dehydrate my kale and make a similar powder.

I did the same thing with several greens all mixed together. Such a nice thing to add to smoothies, soups and sauces.
My main concern with freeze drying is the cost of electric. Do you feel it take’s a lot of electricity
It doesn't. Living Traditions has a video showing how much energy it takes. It was around $1.40 for a load.

I sell damaged wholesale produce & have a 24 tray dehydrator...we dried 15# of kale one day and only got a larger Mason jar full. I also use it as a super food powder to sell at our local market so I have lots more drying to do 😂 I LOVE the color every time

If you devein the kale . Put it in a bag and freeze it . You can then just crunch it up and put it in the freeze drier . You can get a lot more on your trays this way . Love you all.xx
You really need to freeze it and pulverize it prior to putting it in the freeze dryer trays, just to maximize tray utilization. This will literally increase your tray utilization with kale or lettuce by a factor of 10. I'm aware that will limit a leafy vegetable's utility, but if its for survival purposes, who cares.
You’re going to powder them anyway would it make sense to go ahead and freeze dry the stocks as well? Maybe chop them into smaller pieces before freeze dry? I want to use everything that I can
Hey, I had a thought while I watched this. I wondered if after putting the first batch in the freeze dryer trim up the rest pop it in the freezer. Then when it's time for next batch they are ready to place on the trays. AND, the rest of the trays would precess sooner. What do you think? I hope you'll share your smoothie 🥤 recipes. I'm always on the lookout for new recipes for protein veggie or "healthy" smoothies. Happy kale! 😎💜

I was jealous of the kale stems! I freeze those until I have a batch of bone broth to make. I use my kale powder in smoothies, quiche and frittatas, soups, and casseroles (do you call them hot dish in AK?).
I live in AZ and it has been between 80-89 for a couple of weeks. I know the 100-120 isn't far away, it's too late in the year for me to grow greens. They're definitely a winter crop here. Last summer was so brutal with the heat and drought that I'm probably just going to grow ginger since it likes the heat as long as it gets enough water.
Also I was wondering if it would be possible to mix the powders for instants strawberry and kale and freeze dried yogurt powder or dried milk and store them all as one? What do you think? Or maybe just the green and the berries together?
Could you food process it before freeze drying it and have it freeze almost like a brick then process again? I’d think you could get a ton done that way.
Where did you get the lid and sealer for your Jar? Can you also use that same jar and lid for canning?

I've been searching for a video that shows freeze drying fermented foods. Have you tried that? Im thinking of making a powder from fermented cherry tomatoes sprinkled on pizza, noodles or sandwiches. I would love to know if you have tried something similar!

I don't have a freeze dryer but I do have a food dehydrator. Is the nutritional content still relatively the same as freeze dry if I dehydrate it instead? I'm totally guilty of growing foods and not using them 🙈

I've been freezing all my kale the past couple years(cannot justify the crazy price of the freeze dryers-)cut up they pack down into a family small package to freeze-and I can still take out what I need for smoothies and throw in. Are the oxygenators re-usable?
How do you USE freeze dried veggies to add to soup stock to make soup? I know you and Jess both do this but I am baffled as to how.

I don't see the point. Kale was only put on this earth to make you realise how good pineapple is. Its so awful.
I grow a lot of hot peppers and I chop them up and spread them on an oven tray and bake them on the lowest setting for a couple hours and blend it. Chilli powder. This 20 hours to make 2oz of kale powder is not a good use of your time.
