Easy Raspberry Crumble Cookies - Recipe by Broken Oven Baking

Let's make Raspberry Crumble Cookies! They're buttery shortbread cookies filled with raspberry jam (or your favorite fruit/chocolate spread) and topped with shortbread crumbs! This easy recipe makes about 14 cookies in a muffin pan, in 30 minutes or less. They're better than Costco and are perfect for sharing and gifting in holiday cookie boxes!
Ingredients:
½ cup (113.5 g) unsalted butter
2 tablespoons (25 g) granulated sugar
3 tablespoons (23 g) powdered sugar
¼ teaspoon vanilla extract (optional)
¼ teaspoon almond extract (optional)
1⅓ cup (166.67 g) all-purpose flour
⅛ teaspoon salt
⅓ cup raspberry jam
