    Is the fish dred, as in the heat of the day , with No refrigeration, the fish will go bad very quickly. And it will stink.

      The majority of the fish are preserved by smoking them slowly on fire. Some are dried using the heat of the abundance of sunshine present in this part of Africa. All these techniques are ancient knowledge which has been inherited from generation to generation and helps the fish uncontaminated, stink free and can last for months or years. That's how our ancestors were preserving their food before refrigerators were invented.
