It’s because there was no heat in the flue to pull the smoke out

There are a few things that are missing in this pizza construction to make it really efficient. One is that the structure needs to be cured with a first fire before adding the insulation and render layers. Second is that after the chicken wire, a layer of vermiculite concrete needs to be added before the render. In this way you will ensure that your oven will reach the required 400 centigrade to cook a pizza in 1 minute and not waste fuel (wood) unnecessarily.
James May will always provide hilarious comedy just by being himself, which makes him all the better!

Here in the US in late October 2020 it is hard to describe just how enjoyable it is to watch James and crew diddle about and create a diversion from the most stressful year of my life.

Man Lab is a true gem. One of the all-time greats.
That having been said, I always felt slightly betrayed by this segment: given that in the first series we were promised that no part of the Man Lab would EVER be re-themed in a Mediterranean style.

Except for the brick pizza oven which cooks a pizza under 1 minute. You have to work fast when you cook at a brick oven at extremely high heat.

Me and my dad built a pizza oven it was so good for the summer when we had parties also the pizza is really good when. You cook it fresh
You can also do pizza on a regular grill. My wife does is and it's great.
I did the calculations, Gas Mark 47 being 800 degrees C is actually quite close.
Prefer using a ready made portable LPG pizza oven, got a Ooni Koda 16 recently and trialled it on my 13kg Flo-Gas butane cylinder from my mobile heater, lights instantly, heats up quick, cooks pizza in less than 5 minutes, and doesn't need constant refuelling with wood to maintain the temperature.
I had my doubts but that looks good.
I wanted to put something on background whilst I do homework but then this was just too interesting... so I had to watch something else

there's an Italian from Naples who lives in Belfast and build his own wood-fired pizza oven ... on a trailer. He's an awesome man who now servers original, certified pizza to people of Northern Ireland. Look him up Pizza VanTastica!

it serves a double purpose: keeps the fire away from people but at the same time if the oven runs out of flames you can push the door a little and it'll do as firewood. Its the literal definition of genius, and those savvy romans never thought of it, which is satisfying thinking you beat the romans at anything

i built a wood fired pizza oven from Forno Bravo instructions, which is the same as the one in the video... cutting of the firebricks was by far the most time consuming part! Its a thing of beauty when finished.
