Not Roland (obviously) but tofu is already cooked, so really you're just heating it through and forcing a bit of water out, though some find tofu has a 'raw' taste that steaming or blanching also help get rid of. 10-12 minutes is a good middle of the road number - some people like a shorter steam (5-10m), some like a longer one (15-20). Take note of the size of the block, too - he's using 300g, but lots of places do 454g (1lb) and I think some Korean brands are smaller.
