I’m 54% Norwegian 42% Swedish and the remainder Scot. My grandparents came from Norway & Sweden so we celebrated all the Scandinavian traditions - enjoy your trip! Land of the Midnight Sun!!
I really like the way you share about your personal life! And you seem to be a really sweet person. Thanks for all the recipes and for just being you! Filming in the closet!! hahaha Loving this!! Appreciated the travel snacks tips, too! Save travels and have a great week!
For homemade ramen, I love the Ocean Halo organic ramen noodles. I buy them at Walmart. The brand has vegan chicken-less and beef-less ramen broths as well.
Hi Nikki, glad you had a nice time with your sister. Wishing you a lovely trip, how exciting for you, sounds wonderful. Sending much love from Spain ❤️ stay safe 😘
Omg! I didn't know you were Norwegian! I've been wanting to go to Norway! Please do a vlog if you can. That would be amazing! I'm also learning Norwegian for my visit!
I love the Sun Noodles from Whole Foods. I actually buy them in bulk online from the company and keep them in my freezer. They’re DELICIOUS and taste like restaurant quality ramen noodles :)
Thank you for the snack ideas. I always always take prunes and was surprised to see someone else on the prune wagon. Lol. Love the idea about taking the oatmeal and peanut butter packets.
Your trip to your mothers home of Norway sounds amazing!! I,ve seen photos and it looks so pretty...maybe one day I will get to visit there💙...anyway thanks so much for everything you do for all your hard work💜
I'm the worst with knowing what snacks to pack when traveling. So, thank you for all the timely snacking and packing tips. Great looking soup, too! Have a great time in Norway and Scandinavia. I'll be heading to Miami.
Happy Belated Syttende Mai! Both of my grandparents were Norwegian, and I lived there for a summer as a teenager. I can't wait to see your Norway vlogs!
Love your videos! Great travel tips, hope you have an amazing Independence Day with family! I love using Lotus ramen noodles- the millet and brown rice variety are even at Costco and I believe Thrive market has them too; also with a miso broth packet.
First off, happy Sunday:) I hope you have a great trip and time with your mom on Mother's Day. Second, I love derma•e products but my God there are a lot to choose from😅 Also I am definitely making that soup. Nice to see a recipe with ingredients I already have (bad habit, or good, I always buy the same groceries)...and...I am watching bake-off too!!!! I just love how nice all the ppl are and the kids one now is soooo cute. I have learnt a lot for someone who doesn't bake ..plus they always have on at least one vegan or veg baker which is really cool. 😊
My grandma is full Swedish and my grandpa is Norwegian :) I want to visit my relatives in Norway when I am older. Its so cool you’re Norwegian there aren’t many of us. 💗
That's so cool! You will love it. I'm in Norway now and it's so nice. Oslo is a great city and I'm grateful for the opportunity to connect with my relatives 😊😊 I'd love to visit Sweden one day. Have you been? It looks beautiful
Another fantastic what Nicole ate in a day and those meals look 😋. The Chickpea tuna is great on a jacket/baked potato ( i cook mine in the microwave for 10 minutes). Love 🥰 the video and love 💞 Nicole. Enjoy your Norwegian trip.
Mai fun noodles in kimchi ramen are the ABSOLUTE best. I love a more glutinous texture for ramen in general, but I think really thin rice noodles like that are great in a pinch.
I don make ramen ever for sone reason but I absolutely love those vermicelli noodles in my salad. I use some smokey tofu with edamame, greennonion, lots of cilantro, mint, cucumber parsley if i have it, sprouts if i have them and a peanut soy dressing topped with green onions. I could eat it every day. Have a wonderful trip! I dont know what the weather is in norway rn but I am certianly envious of your weather there in jersey. This 87 with 90 percent humidity is already brutal here in new orleans. Awsome travel snack hacks. I always struggle with that when traveling as a wfpb gf vegan. I saw one youtuber also suggest dehydrating hummus! I went on a trip this past year and lived off of steamed broccoli and hummus because there was literally nothing else for me to eat! At least it took the guesswork out of whats for dinner! Lol
Wow, it's so hot there already! Must feel like summer has already arrived. I love hot weather but I know what you mean, it can be brutal. Also, there are some shelf stable hummus options that are great for traveling like this one lillysfoods.com/shelf-stable-hummus-classic Just pack some crackers or pretzels to go with it. Also Thrive has some larger shelf stable options that might enjoy. I tried some of them in this video! ruclips.net/video/nhE2sOSOtK8/видео.html
Okay so I noticed your air fryer in the video but couldn't really find a lot of air fryer recipes on your channel - I would really appreciate some content like that❤
Thanks for letting me know! I'll make some for asap because I love the air fryer 😊 Here's a few I did in the past on IG to get you started until the RUclips recipes come out instagram.com/reel/Ccg16UCrTsj/ and instagram.com/reel/CbykmsGv0hA/ and instagram.com/reel/Ce4wwXYJDy2/ Hope you enjoy!
I love your videos so much. My Sunday's would not be complete without them I am a low vision subscriber. If you show a product or suggest a code, it helps me if you also verbally mention it. Thank you so much for all of the wonderful recipes and content!
Thanks for letting me know Stephani, that's very helpful! I will make more of an effort to do that 😊😊 And thank you, I'm so glad you like my content. That means so much to me. Hope you have a nice day!
I see a lot of people rolling their clothes in their suitcases now. I haven't try it yet. I'm usually going on a short trip like to NJ so I only need a few days of clothes. Hippeas are a great travel snack. Those chocolate mint protein bars are great too. My daughter has them for a snack at school.
The bars have been great on this trip so far! I've really been liking them for dessert on some nights if I'm feeling a little hungry after dinner. So tasty 😊😊 And yes, rolling makes a big difference... doesn't seem like it at first but you can squeeze so many things in. Helps a lot!
Hi Nikki, i've been trying to look for her on social media with no luck but i think you may know more. But what ever happened to Dani Lauren? 🥺 i used to love watching her videos years ago but i realized she never returned to YT after the birth of her baby. I appreciate your response in advance, thank you!
Be careful taking PBJ on the plane. Someone with peanut allergies could be adversely affected in a major way - and not have access to medical care on the plane if it is severe.
Haha I forgot to edit that out! I repeated the last line because I coughed so I had to repeat the last line so I could edit it better (totally forgot lol)
haha I said it again because when I'm editing, it's easier to cut from the end of the last sentence rather than making a cut mid-sentence.....except I forgot to edit that part so awkward! lol so funny

I love Miami! I hope you have a great time 😊😊 And I'm glad this video came at a good time for you, that makes me happy
Happy Belated Syttende Mai! Both of my grandparents were Norwegian, and I lived there for a summer as a teenager. I can't wait to see your Norway vlogs!
Thank you and same to you! Where in Norway did you live? That's so cool
Thank you for the chickpea tuna recipe 😊 hope you’re having fun in Norway 🇳🇴
Of course! Hope you enjoy! I also have a hummus version on my blog ❤❤
I’m a single student, living in a glove compartment. My meal prep this week was 32 burritos. Living the life lmao.
Love your videos! Great travel tips, hope you have an amazing Independence Day with family! I love using Lotus ramen noodles- the millet and brown rice variety are even at Costco and I believe Thrive market has them too; also with a miso broth packet.
I like those too! I need to order some from Thrive because I couldn't find them. Thanks for reminding me, I totally forgot about those 🙌

Lotus Foods has a wide variety of vegan ramen noodles - that's what I would use.
I love udon in soups :) if you have an Asian store nearby you can find thin noodles with no egg that are delicious 😊
Yum! That sounds like a great lunch! I will def try that 😊😊 Thanks for the idea. Hope you have a great day!
Your dishes always look so yummy - enjoy your trip and family visit!
Thank you so much Betty 😊😊 Hope you have a great day!
Nikki that broth looks so exquisite!!! I cant wait to try that dinner! You're right! I think some thai basil would be delightful on it!
Hope you enjoy it! I added a little more curry paste and some extra hot sauce and it was delicious ❤️❤️
Yes, I love prunes!
Mai fun noodles in kimchi ramen are the ABSOLUTE best. I love a more glutinous texture for ramen in general, but I think really thin rice noodles like that are great in a pinch.
Ok that sounds delicious and I think I would like that a lot! Thanks for letting me know 😊
I just started using Native products, and I love them!
Will have to try the deodorant scent you're using..😊
Nice! I'm so glad you like them too! Which scent did you try?
I've been using the citrus musk shampoo, conditioner and body wash. I can't believe the difference it has made in the softness of my hair!
I use rice noodles. They come in different thicknesses and my tummy likes them better than wheat noodles.
Ah good to know! I want to try different kinds next time, these were a little too thin I thought

i love healthy recipes like that 👍👍
Me too! So happy to hear it
I love to switch noodles , I do like Soba and sometimes just use Trader Joe’s dumplings in place of noodles!
Yum! I should have done dumplings! That would have been great. Thanks for the idea
I am going to have to try the dumpling thing. I always forget about TJ's.

I love soba noodles for homemade ramen !
Good to know! I'll try that next time 😊😊 Thank you
Great travel ideas. Wondering if your mom and/or sister are vegan as well?
They're not but they eat a mostly plant-based diet 😊😊
The pb choc builders bar is THE BEST PROTEIN BAR trust me I'm a Crossfitter lol
ok first of all, that's awesome! I've never done CrossFit but I know it's hard so go you! lol Also, I agreed. Love these bars 😊
Safe travels!
