Of course we don't see what she does/did in the office. But on our end it doesn't matter, we digest the vids.

Don't forget to wipe down the bowl and any attachments with lemon juice when you make meringue. Any kind of oil left behind can mess up your mix easily. You can see Claire with a slice of lemon at 15:34. I wipe down bowls I have cleaned just to makes sure I didn't miss any soap residue. I have learned this the hard way, don't forget the lemon!

This series of the 3 stages of baked cake construction are excellent. Claire's teaching methods are technical yet she explains the elements in an understandable way to the beginner. It's great that they visually show you what mistakes look like along with the successful stages.

LOL due to Claire's hilarious reaction to the store bought frosting, it's possible I may never buy frosting at the grocery store ever again, lol. :)
I made frosting from scratch once and literally never bought frosting again. Once you taste homemade frosting, the next time you taste store-bought frosting you're just like "ohhhhhh I see, this is garbage." And it requires pretty much the least amount of effort possible.

Hairdrayer, microwave, waterbath and fridge are good alternatives to a blowtorch and frostbite on your hands.
And in my experience espresso powder dissolves way better in your buttercreme if you mix it with a tiny bit of warm water so you get some kind of a pasty consistency.
Cake frosting is honestly the best part 🙌🏼
For the cream cheese frosting, yeah you have to use butter. I attempted cream cheese frosting a few weeks ago, and i didn't understand why it didn't whip up properly and wouldn't hold its shape. The recipe i followed didn't mention butter, oddly enough... however when i added about 1:2 ratio it whipped up nicely and could be piped. Instantly became one of my favorite frostings!
Not so pro tip - I've used flexible ice packs (for injuries) tucked under my bowl and held in place by kitchen towels to fix Italian Meringue. I'm sure a heating pad would also work for the reverse problem.
I didn't know about Claire until these classes but I'm glad I do now! She's super adorable and I love watching these videos. Can't wait for Assembly 😃

I'm a simple man, I see claire, I click.
With the Italian meringue, if you're a bit worried about the crystallisation of the syrup that Claire was talking about, add a couple drops of lemon juice, or some cream of tartar to the solution prior to bringing up to temp to invert some of the sucrose into glucose and fructose.
Claire is always such a delight 🙈🥰
Alton Brown always told us that pouring your syrup for the Italian meringue against the bowl was bad, because if little drops cool too fast and harden, they can become little sugar pebbles in the finished product. It looks like she avoided this issue by pouring ALL the syrup down the side. : D Much easier than trying to aim between the whisk and the side. We all have so much to learn.

I like this video because I'm far more likely to make frosting from scratch than cake. I make a twist on buttercream for cupcakes where I pour in whipping cream and I whip tons of air into it. This works since I like my cupcakes refrigerated.

Loving this series! I'm honestly loving to learn how to make a cake from scratch instead of a "Just add water" cake mix. Sure they're easier to make, but the extra effort is definitely worth it.

In my cream cheese frosting,
I use melted white chocolate, and cream cheese with a little bit of butter.
It's my absolute go-to always, as the white chocolate doesn't make it too sweet.
Claire can teach me whatever she wants, ill learn! 😍
Never gonna make a cake in my life but I’m enthralled.
I'd be curious to see the same recipe using different tools, like making all components of a cake by hand, with a hand mixer, or with a stand mixer. I wonder how much the tool influences the result.
these techniques all pre-date the Stand Mixer, and can be done with hand-held electric mixers, or even by hand. just takes a f***load more time and effort.
@@jsdemonaco Of course, but the details of the end result are what I think would be interesting. How long is long enough? Does the mixer add more air? I don't have electric mixers, and I always feel like somehow my desserts aren't as good!
Its because many baked goods do come out better with a stand mixer even better than the electric hand mixer and way better than by hand with a spatula

I had the soupy swiss buttercream problem. I took a frozen gel pack - the kind you wrap around a tennis elbow - and packed it around the bowl. Worked well.
For the chilling fix, I've used a frozen ice pack long and narrow made to wrap around an arm. Also, my hubby won't let me near the blow torch, so I use a hair dryer. Let's see if Bon Appetit sees my hacks and uses them!

the first time I made swiss meringue buttercream my butter was too cold and I almost threw the whole grainy mess out, but what also works is to microwave a little portion of it and mix it back in! did the trick just as well without a blowtorch on hand
(it was a pumpkin buttercream btw, with homemade pumpkin puree and lots of spices, which is Very Good)
I love this method of making swiss meringue butter cream, because she doesn't use a candy thermometer

I've never made cream cheese frosting with butter but instead i whip cream really stiff and then whisk the cream cheese into it. It get really light and fluffy but not too heavy! I dont know it would work for a layer cake but on top of a one layer cake or a cupcake its perfect!

This is amazing! I made my first buttercream in March and my butter was too cool. I began to panic but after a good google search I started to heat the cream and it was saved. I was so relieved!
Claire, I want you to know that I made a swiss meringue buttercream for my husband's birthday cake and it worked the first time! All I needed was my mantra - WWCfBATKD? - and to watch the middle of this video about six times. It did look really weird for a bit, but it all came together in the end, no ice cubes or torches required.

For some reasons people around me prefer the cake layers than the frosting. Silly them, that means I get all the precious frosting to myself.

When swiss or italian buttercream collapses or becomes soup.. I just keep it mixing because eventually it will come back to its fluffy more solid state.. if it doesnt go back put it back in the fridge or use ice as mentioned
i worked at a bakery, we added lemon juice to our cream cheese frosting to up the zing factor a bit. ATK suggests buttermilk powder, I now use their recipe to rave reviews.
