    One of my favorite go-to recipes that's super easy, quick, and delicious is basically a creamy pasta primavera with chicken! I just sauté some garlic and onion in a medium pot with olive oil and after a couple minutes I add diced chicken breast and season it with some salt, pepper, oregano/Italian seasoning, and some crushed red pepper if you like a little spice. Once that's done, I add in veggies. You can add whatever you like but I usually do zucchini, yellow squash, red and yellow bell peppers, and sometimes spinach! Once those are cooked down a bit I add in some chicken broth and let that simmer, then add in some heavy cream and some more seasoning. Let that simmer for maybe 10 minutes, then mix with pasta (I like to do bowties or penne), and grated parmesan cheese! Sooo good. ☺️

    My favorite and easiest dish is call "Huevos Ahogados" or drowned eggs. They resemble alot to poach eggs. It's a Mexican dish serve alone. Soup like 🥣
    Recipe ⤵️
    -In a pot boil 4 to 5 tomatoes
    Half an onion
    1 or 2 cloves of garlic
    -when completely cook blend everything set aside
    - get a deep pan add cooking oil
    -dice tomato and onions in cube add it to your pan
    -dump tomato sauce in pan
    -add your seasoning ( I like adding cumin, salt, chicken broth powder) mix it together
    -if you need more tomato you can add tomato sauce in a can to get that rich taste and color
    -then add as many eggs straight in the pan with your sauce
    -if it needs more water you can add it till the eggs are covered then cover with lid
    - try to move eggs and flip them soo they can be cook both sides
    -they cook pretty fast 10 to 15 min in total you can cook it till egg is fully cook my favorite or if you like the poach way cook it for less Time and then serve 🤤🥣

    Crockpot burrito bowls:
    Put chicken breasts with salsa covering in crockpot on low for 8 hours.
    Drain water when fully cooked. Shred chicken with two forks. Add in a can of beans and corn. Serve over rice with toppings (cheese, sour cream, guacamole, etc.)
    It is so easy and delicious! We also use the chicken to make quesadillas (I bet Riley would love them!)
    Our 7 month old son is also doing baby led weaning and he eats the burrito bowls with us! I just make sure his chicken is nice and shredded, smoosh the beans, and add plain full fat freak yogurt instead of sour cream!

    Something I love to make year round is sheet pan chicken & veggies! I usually do what's seasonal, but my favorite is butternut squash, broccoli, red pepper, and brussles. I pre-chop everything a few days before and throw it in a bag in the freezer, then take it out the night before I want to make it so it can defrost. Just toss with olive oil, s & p, and some paprika and bake at 350 for 45 minutes! I create little pockets from parchment paper that I cook the chicken in so it stays really moist, (season with olive oil and whatever seasonings you like, then foil the parchment paper around it to create a sealed pocket), and add the last 15 minutes of cooking! So yum, and you dont have to watch it!

    Sauté some Italian sausage until cooked and set aside. Sauté some red and yellow peppers for a few minutes, add some garlic and cook. Meanwhile, boil some pasta, usually rotini. Once done add the pasta and a jar of your favorite red sauce to the pepper pan, along with the cooked pasta. Stir in some spinach at the end and serve. Sprinkle parm cheese on top. It is soooooooo goooood. I like spice so I use spicy Italian sausage and season with a little salt and pepper as well.

    We got a quarantine bird feeder and it’s amazing! 😂 Riley would probably love a hummingbird feeder too! We got the “Squirrel Buster” feeder and fill it with black oil sunflower seed .

    So thrilled for Jackson and you all that he slept about 12 hours last night. He still needs naps during the day at his age, but you are working on that, so it may yet come in a helpful manner. I have never in my entire life been a morning person. That being said, I have often worked what could be called normal jobs that required a schedule of 7am-3pm, 8am-4pm, 9am-5pm, in that range somewhere, which meant I had to get up early, as I had done for school forever. I began to get up early enough to pray and have coffee and breathe a bit before getting ready for work. Then when I went back to more writer/theater hours, I would get up in the morning because I didn't owe that time to anyone but me and the quietude was blissful. I can get showered and ready really fast: absolutely under 30 minutes for everything, sometimes less when I was in college or grad school. But, there is something about relative quiet and solitude in the early morning that is conducive to providing a good start for the day. We are free of all the safety mechanisms, guardrails we put up emotionally during the living of the prior day in a tough world. I even found I like sex better in the early morning because I did not have all the junk of the prior day weighing on me in one fashion or another. It is so much better as a prayer time. So, enjoy what you can of quiet time with Jackson and your coffee in the hours before Joe and Riley stir. When the kids go to school, you will be deprived of most of your choices as to how that goes, so soak it all in now. There is something almost romantic about the quiet of nature and the streets and you start to hear the birds and creatures all begin to move about and the traffic slowly builds as the early morning delivery folks leave the streets and the workers go off to work and the kids to school. It may be quite pleasant out on your deck. Have your coffee out there early in the day and put Jackson in that thing you got for him to use on the back porch at the NC cabin in the woods. If Jackson got enough sleep and doesn't need the extra time in your bed after nursing, then you are doing well by him to allow him to play when he is at his best for the entire day in those early morning hours. I shouldn't laugh, but all I could think when you said Riley named Joe 'Beast' for that Disney movie was wait until she's a teenager and won't like the boy she wants to date or some such; she'll think she named him oh so well. LOL. I hope you got Riley to let the fly go, so it can live. Insects do have a purpose in nature and do not exist for our personal amusement. I love that she comes downstairs with Joe in the morning. So sweet. They all love the Sophie giraffe. Whoever made the silly thing is a genius. Your hair looks beautiful braided. And the yellow dress should lift your spirits a little. Don't let Riley get into your things. You are in control of that. She has to learn those sorts of things are not hers and not appropriate for her to have her own until she's grown. She has loads of toys. She needs to learn to put her clothes on, put her toys away regularly, use the potty, help in the kitchen with mixing batter for muffins or putting plastic dishes in the sink when done eating. There is lots she can do to mimic adult life without handling sentimental jewelry or costly cosmetics. She started a bit with the laundry. That's good. Land o' Goshen, Jackson napped for 55 minutes? Wow! Another step in the right direction. I would take care with language. That toy was a hand-me-down from Whomever that became Riley's and is now Jackson's. It is not Riley's toy any longer that came from someone else and you are "letting" Jackson play with it. It's not a family heirloom from a grandmother for Riley. It's a toy and one that does not demand anything of them, so is not pertinent to Riley's age group anymore. It is not like the Montessori or LovEvery or KiwiCo toys that are meant to be played with for a long time because they challenge the child so. But even they are toys every child will use in turn. I had to laugh: do you suppose when Riley goes to middle school she's going to want her own phone? That's a smart-looking jacket you got Jackson. It's become an ongoing treasure hunt to find the sanitizing products we need for the pandemic. A recipe binder or card index is a great idea for things your family enjoys and you'll actually make. You have no good excuse in the modern world, because cooking shows and cookbooks nowadays have photos of how things are supposed to look at each stage and they tell you what all the substitutions can be. I think Jackson's playpen is good because he can see Riley and you can see him. Do you never take the children outside. Riley can play with her water on the deck. Are your roses all done?

    First, I had to pause the vlog to grab a call and when I paused it, the still shot of the three of you during rileys laughter is just GOLD.
    Second, you look happier and happier each vlog as you go getting more sleep. So happy for you mama.
    Third, I am just going to come out and say it, could your symptoms be COVID? Some people only get light symptoms like the ones you mentioned, and you pass it just fine. I love your channel and have been watching since I was 8 months pregnant and we watch you every monday, wednesday and friday so much so that when my little one (Jack) sees you and the kids, he smiles! Big hugs from Miami.

    My go to recipe during the work week for my husband is chicken meatballs!
    1lb ground chicken
    1/2 cup Panko breadcrumbs (you can use plain or Italian)
    1 large egg
    Mix altogether and bake for 30 minutes at 375 degrees. You can pair with pasta sauce and zoodles or regular pasta 😃 I’ve also done an Asian version with sesames seeds and shredded carrots with rice.

    an easy meal I love to make is burgers and salad! we fry the burgers with paprika, onion, garlic, black pepper and italian herbs dry seasoning and for the salad we use corn salad leaves, feta cheese, beetroot and tomatos with mayo and the same seasoning we use for the burgers. super simple but yum!

    One of my favorite recipes is
    Tater tot casserole it is so easy and so good
    1 lb of ground beef
    1 onion diced
    1 can of cream of mushroom soup
    1 can of cream of celery soup
    1 1/2 cups of frozen peas
    1 bag of tater tots
    2 cups of shredded cheddar cheese
    On the stove brown hamburger meat and onion season with salt and pepper. Cook until browned. Drain off any extra grease. Return to the pan and turn of heat. Add both cans of soup and peas. Grease a 9 x 13 with cooking spray, pour in your meat mixture and top with tater tots. Bake at 375 for about an hour or until bubbly. About 10 minutes before it’s done add cheese to the top. This is a great dinner to make ahead of time and put in the oven when you’re ready to eat it.

    Chicken enchilada bake with green chili sauce
    2c cooked shredded chicken ( I usually will buy a rotisserie chicken from the store), 2c cheese, 3tbsp butter and flour, 2c chicken broth, 1 4oz can diced green chilis ( i normally do 2), 1c sour cream, about 10 tortillas.
    In a sauce pan bring butter and flour to simmer and cook for 2 min, add broth simmer till it is thick and bubbly then remove from heat and add sour cream and chilis and stir. Once cooled a bit just layer in a pan and put it in the oven @350 for about 30 min. Total should take you less than an hour from start to finish.
    (I usually double the meat and sauce)

    One of my favorite go to recipes is Cheater Gyros, it makes an amazingly quick summer dinner that is light and refreshing! You just need a protein (I use chicken or beef), cucumber, greek seasoning, peppers, onions, pitas, greek yogurt, garlic, lemon juice, dill and a little oil.
    Grate up the cucumber and put it in a bowl, and enough greek yogurt to fully incorporate the cucumber (about one cup). Add in equal parts dill, lemon juice and garlic, about a teaspoon but adjust to taste. The final product should be refreshing tzatziki. Put in the fridge to chill.
    Chop up the onions, peppers and proteins into strips. Cover the protein in greek seasoning and let sit while you saute the onions and peppers in a little bit of oil.
    Once the onions are clear and the peppers are just tender add the protein and cook until finished.
    Take out a pita and load up with your pan full of goodness and top with tzatziki so good!

    Do you have a crock pot? Get a roast. Oil the crock pot before you add the seasoned roast ( just salt and pepper) add onion soup mix and ranch powdered mix on top of the roast. Add a stick of butter on top (optional) cut a Pueblo pepper and spread around the roast. Add 1/4 cup of water. Cook on high (4 to 6) hrs. Tastes amazing with rice. Make a pot of rice a half hr before the roast is done cooking. When done put the roast and juices over the rice. It’s everyone’s favorite in my house and simple and easy!!

    I personally think Stir Fry is soo easy to make! Hokkien noodles, oyster sauce, soy sauce, chicken and then frozen veggies. Cook the hokkien noodles in a covered bowl with boiling water and leave to sit while you cook the meat. Take the meat out and cook the veggies. Drain the noodles and add them and the meat to the pan with the veggies then add soy sauce and oyster sauce to taste!

    I don't see the chicken rice recipe here that I don't know where my Mom got it from .I love it ! It is made in the slow cooker . Also I can relate to severe anxiety and now they added panic attacks and depression. I talk to a therapist every 2 weeks online . It helps a lot . They are seeing the highest number of anxiety patients than they ever had .
    I have the pre cooked chicken strips in quart bags . I use one bag of cooked , chop chicken.
    1 can cream chicken
    1 cup chicken broth
    2 minute rice microwave cups of brown rice
    Stir the soups together in a bowl .
    Add the rest of ingredients to slow cooker.
    Pour the soup over and mix it up . Cook 4 hours on low .

    My go to easy meal is lasagna because it is easy to prepare ahead and you can add in veggies with the ground beef or turkey. Also use the no boil noodles and just sauce it up really good and it cuts down on the extra step of boiling the lasagna noodles and hope you feel better.

    I have my own recipe binder. Anything that my fiance and I both enjoy goes into the binder. I also save tons of recipes on pinterest and then put my favorites in a favorite section till I have time to transfer it to paper and put it in the binder. White chicken chili is super easy. And soo yummy.
    Ingredients:
    2T Butter
    2T flour
    3C. chicken broth
    1 rottisery chicken pulled apart
    2 cans white canelli/ white navy beans
    1 can of corn
    2 cans diced chilies (mild/med/or hot)
    2T minced onion flakes
    1/4 t. Garlic powder
    2t. Cumin
    1t. Chili powder
    1/2 t. Salt
    1/2 t. Pepper
    2C. Shredded pepper jack cheese
    1C 1/2 & 1/2- I know you dont use dairy so you could try to substitute. And see how it tastes and just add corn starch to thicken a little.
    Instructions:
    In dutch oven melt butter and stur in flour (cook & stir 2 min). Whisk in broth and 1/2&1/2. Bring to a boil. Cook 2 min till thick. Add the remaining ingredients and simmer 10-15. Done. So easy so goooood! Perfect for cool days so filling

    One of my favorite recipes is crescent crust pot pie, super easy!
    Mix together:
    one can of cream of mushroom or cream of chicken soup
    Cooked Meat of choice (about 2 cups worth) (I use shredded chicken usually)
    1 bag (16 oz) of frozen mixed veggies
    Salt, pepper, and any other seasonings you like
    Pour into a greased or sprayed 9x13 pan
    Top with (1 can) crescent roll dough and pinch together to make one big sheet to cover on top of the mixture
    Cook at 350 for 30 mins

    If you up to trying Mexican food, try MOLE! With Mexican rice and beans. It’s super easy, just shred chicken, buy one chicken broth and 1 can of already prepared mole (you can find them at Walmart, we use the brand “ la costeña”). Heat the chicken broth with the mole paste until it’s dissolved then add chicken and let it simmer as it’s ready! We use 1 chicken breast for one can of mole and one chicken broth carton. Just for me and my husband. And of course corn tortillas and as for the beans we just use can pinto beans.

    Hi Kayla! I love watching your channel. I have a little boy who is one month younger than Jackson. :)
    One of my favorite things to do is make homemade meatballs. They are so versatile! Just add garlic, Panko bread crumbs, and salt and pepper. You can make a few batches of meatballs ahead of time and freeze them until you need them which makes it super easy to throw together. :)
    Some meals I make with them are:
    -Sweet and sour meatballs and rice (you can buy the sweet and sour sauce anywhere)
    -pasta and meatballs with your choice of sauce
    -sriracha meatballs and rice (sauce: sriracha, honey, soy sauce, rice vinagar, ginger, and garlic)
    -or you can use them as an appetizer! Just stick some toothpicks in them with any sauce you like!
    Hopefully this helps give you some ideas. Good luck and have fun!

    One of my favorite things I make are English muffin pizzas. They are really easy and kids LOVE them!
    You just need an English muffin and put pizza sauce on it and add cheese and your toppings of choice. Then you bake it in the oven at 375 for 10 minutes. It’s easy and super quick to make :)

    Noodles and Pesto
    1 box bow tie pasta
    1 jar basil pesto
    1 pound Italian sausage
    2 bell peppers
    1 yellow onion
    Boil pasta until it's done, strain, and mix with pesto. Set aside.
    In a pan, brown Italian sausage, add chopped bell peppers and onions. Cook until soft.
    Serve sausage/peppers/onions over pasta.
    ENJOY!
    I love how simple and easy this recipe is! It's great for leftovers as well :)

    I hate cooking lol but it became my job when we got married because I was a teacher. Now I’m sahm so still doing it lol. My favorite besides spaghetti lol, is egg roll in a bowl. A bag of shredded carrot/cabbage, ground beef, soy sauce, salt n pepper, sometimes I add egg when I remember, and can add crunchy won tons on top. I also will add rice when I want a more filling meal.

    We keep it simple, I plan out 5 dinners a week and base our grocery orders on that. Always make extra for lunches and be adventurous. If it didn't turn out, eat yesterdays leftovers 🤣 food is fun!

    Super easy chicken pasta dish
    Bake the bacon strips and put aside. Bake the chicken in the same pan and add cream and spinach (frozen) after it's cooked. Boil the penne pasta at the same time and add everything in the pasta pan. Time to plate and add cheese if you want.
    Takes about 20min 👍

    My Moms Meatloaf Recipe:
    Lb of beef
    1/2 jimmy dean sausage roll regular
    1 egg
    1 cup milk
    1/3 cup yellow mustard
    1 slice bread pulled apart in small pieces
    Mix well, bake in small glass casserole dish
    350 for an hour.
    AMAZING. So simple, it’s my family’s favorite, on a weekly rotation. I serve with mashed potatoes or Mac n cheese and a veg. 👍

    Hiiii. Super easy recipe for chuck or swiss steak. Cut up potatoes/sweet potatoes/onions, Spice steaks and potatoes with montreal steak seasoning or whatever u like to use, put in 9x13 pan, mix 1 tbsp honey and 1 tbsp soy sauce, pour into pan. Cover tightly and cook on 350 for 2 hrs. Seems like not so much sauce but comes out super soft and yum. Does Jackson always play so well by himself? My 6 month old wants me to sit and play w him all day long. Glad your bloodwork is ok!!

    My favorite is chicken enchiladas soup in the crock pot. Just take raw chicken throw it in there with some seasonings, enchilada sauce, cream cheese, can of rotel, and some water and let it cook until the chicken starts to shred up!

    Hi from sunny South Africa,
    We here in South Africa have a traditional dish called "vetkoek". Roughly translated to "fat cake". My family loves to eat it. We eat it as a snack when I make it small and add a bit more sugar to the mix, or as a dinner, then I make it bigger and less sugar with a mince filling. Basicly you can eat a vetkoek with anything. It's easy to make and really filling. I make my dough in a bread machine or just buy ready made dough from the dely section at our local supermarket. I will add a link to my favorite recipe for making it.
    Have fun making it, I know my kids love to play with the uncooked dough.

    I’m going to give you my husband’s favorite recipe that I make him it’s called shepherds pie
    -peel and cut potatoes and boil them until soft
    -with the potatoes make mash potatoes
    -cook some ground beef or ground turkey I prefer ground turkey and a pound should be good and season to your liking I usually season it with a sazon packet, adobo, garlic powder and onion power. But it’s up to you what you season with.
    -next turn your oven to 425
    Now we’re going to build it
    -the mash potatoes you made put that into a casserole dish a little more than half way
    - next add your ground turkey or ground beef
    - then add a can of corn well drained on top
    -Then as cheese
    In the oven it goes until cheese is melted
    Then serve 🥰👌🏼🍴🍽

    Buffalo Chicken Stuffed Peppers! This recipe is pretty quick to prep and only takes about 25-35 to cook. Sometimes to even save time, I will cook the chicken a day before and shred it so its ready to go (that's my least favorite step so I like to get it out of the way).
    INGREDIENTS:
    4 green bell peppers sliced in half length-wise
    2 cups cooked shredded chicken
    8 ounces cream cheese softened
    1/2 cup grated cheddar divided
    1/4 cup grated mozzarella
    1/3 cup Frank's Red Hot Sauce
    1 tablespoon ranch seasoning mix
    1 tablespoon chives
    Ranch or blue cheese dressing for serving
    INSTRUCTIONS:
    Preheat oven to 350 degrees.
    Place the pepper halves in a 9x13 baking dish and set aside.
    Add the chicken, cream cheese, 1/4 cup of cheddar, mozzarella, hot sauce, and ranch to a mixing bowl and stir well combine.
    Spoon the chicken mixture evenly into the peppers.
    Add one tablespoon of water to the bottom of the baking dish and cover pan tightly with foil.
    Bake for 25 minutes or until peppers have softened to your liking.
    Remove the foil, sprinkle with the remaining cheddar, and set your oven to broil. Broil for 1 minute to melt the cheese.
    Sprinkle with chives just before serving. Drizzle with ranch or blue cheese dressing, if desired.

    Just wondering... Did you start Jackson’s sleep training on the first night he slept in his own bedroom or did you give him couple of nights to get used to new place first? I’m planning to move my boy into his bedroom soon as well in hope of a decent night sleep🤞

    I've seen some gummi crib rail covers for kids who chew on their crib. (It's not food, it's just a cover lol). Also, my 1.5 old was cracking up at Riley when you were telling your story 😂

      Ouuuu. And I think my favorite recipe (right now) is Mississippi Roast in my Crock-Pot!
      Chuck roast
      1 pack of ranch seasoning
      1 pack of au Jus gravy mix
      Salt and pepper
      Pepperocini peppers (add how ever many whole peppers and how ever much juice from the peppers that you want)
      1 stick of unsalted butter
      2/3 cups of water
      Season the roast with salt and pepper and brown the roast on the stovetop first, then transfer to the Crock-Pot. Dump all ingredients on top of the roast and then add the stick of butter right on top. Cover and cook on low for 8 hours or high for 4 hours.
      We eat ours over rice, but lots of people eat it over mashed potatoes. Soooo yummy 🤤
      *We use a 3 lb roast and it makes enough for 2 days! We're a family of four as well!
