Mushroom and Sundried Tomato Pasta packed full of Flavour

  • Ingredients
    8 oz Your Favourite Pasta, cooked
    1 Cup Mushrooms, chopped
    1/2 Cup Sundried Tomatoes, diced
    3-5 Cloves Garlic, minced
    1 1/2 Cups Milk (or plain unsweetened milk alternatives like Cashew or Oat etc)
    2/3 Cup Vegetable Broth
    1/4 Cup Cheese of Choice or Nutritional Yeast
    1/4-1/2 Tsp Cajun Seasoning, optional
    3 Tbsp Fresh Basil, chopped
    2 Handfuls Fresh Baby Spinach, chopped
    Salt/Pepper to taste
    If you like your sauce to be thicker for a cornstarch slurry, it’s equal amounts of cornstarch to cold water. I would start off with a teaspoon and work your way from there if you don’t like the consistency, make another slurry with another teaspoon of cornstarch and water add it and give it a few minutes and see what you think but again it is not necessary. The flavour is there.
