23 minutes and they spent at least 22 of them cooking away! No drama, no spectacle, no entertainment business nonsense, just two incredibly learned and knowledgeable cooks teaching people how to cook. Love it.
I can't believe how talented Jaques is with his knives. He is amazing. I remember watching those two on PBS. Some times there are tears in my eyes because they were so good together. :-)
The magnitude of these two and their collaboration is as heavy as it was back then. Maybe even more so. For us Chefs and home cooks alike, this is like Church

I felt completely lost when trying to decide a way to cook a whole fresh salmon and wasn’t getting anywhere with google, Julia child rested my anxious mind around dinner parties once again. Looks like we’ll be eating well tonight :)
They’re both fabulous chefs. And the recipes With the instruction on how to cook it is magnificent. Are you still watch this when I was young. And I just adore them both

They actually live in Madison Connecticut. When I heard the news, I was brought to a few tears. They were a great couple who did so much for the cooking world. Jacques even has a foundation now called the Jacques Pépin foundation. I don’t know what it’s about. I just heard about it
"You can do what you want; it's your fish" and then they share it altogether..I prefer the black pepper as well..for me, white pepper has a strange after taste ...a little metallic

I think it depends on the quality of the white pepper. Cheaper white pepper often has a terrible after taste.

A better way to scale salmon is to use a Yanagiba to slice the scales off in strips. It’s clean and will not bruise the meat.
