I use AirServer & ScreenFlow on my Macbook to capture the screen of my ipad. When you run AirServer you can send the ipad screen to your MacBook via AirPlay, and ScreenFlow to capture the screen on my MacBook. If you have a jailbroken device, you can also look at "Display Recorder", which does the job too, but I find the first option a bit more flexible. Hope this helps!

"Display Recorder" (available in Play Store) appears to be doing the trick? Have you tried that? There is a free version so you can try it.
