  • Deep-fried chicken boneless wings with a parmesan-garlic sauce

    📜 Ingredients for 4 servings:
    16 chicken wings
    2 eggs
    50ml (1.69 fl oz) milk
    150g (5.3 oz) all-purpose flour
    50g (1.7 oz) corn starch
    1 lemon
    2 tsp (0.32 oz) paprika powder
    1 tsp (0.16 oz) rosemary
    1 tsp (0.16 oz) thyme
    1l (33 fl oz) sunflower oil
    salt, pepper
    For sauce:
    juice of 1 lemon
    50g (1.7 oz) Parmesan
    3 garlic cloves
    50ml (1.7 fl oz) cream
    1 tbsp (0.5 oz) dry parsley
    1 tbsp (0.5 oz) honey
    2 tbsp (1 oz) white yogurt
    1 tbsp (0.5 oz) vinegar
    Debone the chicken wings (optional step).
    Whisk together the eggs, milk, juice of 1 lemon, paprika powder, rosemary, thyme, 2 pinches salt, and pepper.
    Put the wings in the mixture and stir together. Refrigerate overnight.
    Prepare the sauce - in a bowl, blend all ingredients with a hand blender.
    In another bowl, stir together 150g (5.3 oz) flour and 50g (1.7 oz) corn starch.
    Pour the oil in a pan and turn on high heat. The oil must be very hot, otherwise, it won't form a nice ragged surface.
    Wrap the chicken wings in the flour mixture and put it into the oil. Decrease the heat and fry for about 7 minutes until golden brown - we don't wanna burn the wings before we cook them through.
    Remove the wings to paper towels to drain.
    Cover with sauce before serving.

      Hi. Thanks :-) ... it's garlic sauce. I had it for dinner when I visited Toronto a year ago... I tried to reverse-engineer the recipe just by taste.
