Be it ragdo, bungara bateta or dal pakwaan... they are all preferred without bias... To talk about the most sought after kathiyawadi platter, ... yes... its spicier, oilier, n with a prominent garlic flavour... bharela marcha, bhinda, karela are very popular... ringda no oro n bajra no rotlo, is wht makes it wht it is... bajra no rotlo is relished both wth garlic chatni/ jaggery... khichchi na papad serves as ideal evening snack during winters... No need to correct Anand Bhai, It's pauva only in Gujarati you need to learn that poha is called pauva in our language Otherwise very nice food exploration 👍
On a lighter note. Anubhav ne Anand ko dhamkake rakha he paua nahi poha hi bolna he. While Anand being true kathiyawadi can not leave its gujjupana. But anubhav bein delhite 'FIR PAUA'..
would suggest to please explore recommended restaurants also in cities, if you want it to be one stop shop for recommended street food only, food culture lies in well run restaurants also where there would be more care to quality and show chef skills also ....problem is not many vlogs out there showing restaurants, only street food and can't family everywhere standing and eating food ....

In Karachi there are a lots rather you can say a dominated population of Gujrati community called Memon and there are areas named after like Dhooraji, Bhadarabad, Yaseenabad, Hussainabad. And in these places they speak Gujrati language and they have specific food like Kathriwar Daal Chawal, choole, Chaat. Then there are special Aloo Chaat.
