Here in Australia I have experimented with the same dried ingredients as you funnily enough. I also dehydrated from our organically grown trees, lemon rind, mandarin rind, strawberries and white peaches. Each one of those made an absolutely beautiful honey and everyone who purchased it from us last year are waiting with great anticipation for my infused honeys again this season. I found it easier to transfer my honey into a glass Pyrex jug to pour it into the jars. I purchased a levo 2 infusing machine from the United States to use for this purpose but found that it only holds about 3/4 cup of honey and you have to infuse for a few hours. It’s quick if you want infused honey in a hurry but I think it is more enjoyable infusing it on the shelf and getting to turn the jars every day and watching the process as the honey changes. We also did a chilli flake honey to eat with cheese on crackers and that was really nice as well. Cheers Theresa
Hello Australia!! I'll have to try some fruit options. I have freeze-dried strawberries that I could use, and I'm hoping to make some freeze dried orange and lemon rind. There are SO many options....I can't wait to try them all. I will definitely have the honey in something that makes pouring easier. I also like just letting them infuse naturally. It is more enjoyable, a lot cheaper and you could do as much as you want. Thanks for the tips!!!
@@waardenburgfamilyfarm4764 you are very welcome. I don’t have a freeze drier so everything i use to infuse has been dehydrated. I have found the longer you infuse the more intense the flavour transfer across into the honey. I kept checking ours after 2 weeks and found that the vanilla and lavender intensifies the fastest of all of the infusions.
Another wonderful creation I just love honey and all it’s matching delicious use ...I cannot live without honey...we had the little adorable bees in our garden specially put toughener to have honey ...it was such a delicious honey ....and loved your doing too 💝💯🤗😆⭐️
Love that you all do “experiments” when you’ve never done these things before - and it gets to my scientific roots! Going into the winter this is a totally new thing to try for teas!!!

I started a batch of honey and garlic and look forward to trying it. I've used lemon and garlic in my fire cider, but it would be good in lemon too. I may have to give that a try. Thanks!
We make our own vanilla extract & just cross cut the beans in 1" strips. Faster & safer than slicing lengthwise. We extract for a year before bottling, so flavor is very buttery & strong.
Very interesting! I'd love the lavender especially, but they all look wonderful. (Not sure if you have large glass (Pyrex) measuring cups or not, but I use my 4 and 8 cup ones often. Instead of trying to pour out of a big jar repeatedly, I pour what I think I'll need into a large measuring cup. Much easier to pour from something with a spout & handle than from a large heavy jar's round top.) Enjoy the different teas; I'll bet they're delicious. Looking forward to your next video!
Yeah,k I realized pretty quickly that I should have poured it into something that made filling the small jars easer. I figured I was already kind of sticky so I just kept going. I'll definitely use something smaller the next time I do that. Thanks!!!
Oh sweet one- these look so wonderful. Ive done honey and garlic, however im gonna step out and do some you’ve one. I love hibiscus, so I'd love to make that... i wonder if you let it infuse longer will the flavor w stronger? 🤔 Blessings ❤
Yeah, I think I would maybe use a bit more of the hibiscus and let it infuse for another week or two. I would probable taste it after 3 weeks and see if it was strong enough. It's fun to experiment with all kinds of flavors. Thanks for the encouragement!
Another enjoyable video. We are enjoying watching your journey. One thing to keep in mind is that when you add anything to honey you’ve now altered it and it now has a shelf life. The introduction of bacteria, Enzymes and other things removes the shelf stable properties of honey. Using peppers from your garden will obviously also give it a shelf life but will also give you various results because the inconsistency of peppers. I tried ghost pepper extract and dried peppers. The extract gave the heat but actually tasted terrible. The first batch of the dried peppers gave no flavor at all and a second test of a greater amount and over a month was also a terrible failure. Tasted bad. Check out the YT channel Alabama Hot Sauce. He has a couple of great honey related videos. Anything added to honey then makes it adulterated and has different state and federal regulations. You keep creating and we’ll keep watching 😁

What fun additions to a hot tea or fresh hot biscuits. Maybe take your vanilla bean pods and put them in your sugar bowl to make vanilla sugar.

Once you have had honey glazed steak you won’t want it any other way. Put your usual seasoning and add the honey 😊

I've made vanilla, but never let it extract for a year. I'll have to try letting a batch go that long. I love the description of 'buttery and strong'.
Air dry cayenne peppers, powder them and add to the honey. Drying them removes the moisture. Debbie

I bought some honey from a friend that raised bees. It made sugar! I would just stir it up and take tablespoon a day! Do you have to warm it up?
It's fine to eat if it's crystallized, but if you want it runny/smooth again, you can simply add a little bit of heat.
Maybe if hey stood longer and given more time to infuse. It may be a little stronger. Debbie

You could funnel a piece of paper!
That would work. I may just make sure I have other sizes of funnels. I use them for so many things it would be worth having more options.
