I own the Hatsukokoro Kumokage, great knife for its price range, feels nice and thin at the blade with a solid spine that makes it a good all rounder.

Yeah, they are awesome. Really solid knives and like you said for the price, they're hard to beat. Although I chose the Shiro Kamo in this battle I'd be stoked to get a hatsukokoro in my kit.

What kind of cutting board is this? Can you send me a link where I can buy such a large cutting board?

Shiro Kamo the best for me. I got all set AS with stainless clad 150 petty , 210 gyuto , 240 gyuto and 170 bunka with kurouchi

I love the profile of the Hatsukokoru. But I agree with you, my favourite would be the Shiro Kamo.

Thank you for your comment! Both are fantastic knives, I'd be happy with both, but yes, we agree, Shiro Kamo!

Don’t have a shiro yet. But I love my Hatsukokoro to death. Chipped it during its first service cutting pork belly about 2 years ago. Been sharpened and thinned countless times and still going strong

The Shiro Kamo gyuto was my first Japanese knife a year ago. It’s been my go to since despite adding a few knives at double the price. Standouts are how easy it is to sharpen the Aogoami Super, edge retention, balance in hand. Downsides are some of the finishing isn’t the best. However for core knife performance it’s a legend.

I have never been dissapointed with Shiro Kamo, even the lower priced ones.

Love your videos! Thanks to you I know which knife to get next.
Also, friendly advice: you need to fix your audio quality. Either get a mic closer to your mouth, or get acoustic panels. You have quite a bit of acoustic problems. But seriously. Love your content❤
