In Liguria they grow a famous native basil, and for them the recipe is sacred!
Genoa has a lot of recipes with vegetables, chicken, fish, eggs ...a lot
Farinata is made with flour made from ground chickpeas mixed. with salted water ( I can't remember the ratio) left to rest for many hours or overnight, stiring occaisionally to get all the lumps out. It is then poured thinly onto a shallow, well oiled baking tray and put in the oven until it forms a toasted crust. It is mostly eaten without condiments except some ground pepper.
Pesto is made with fresh basil leaves, pine nuts, pecorino cheese and olive oil all smashed toghether in a mortar. 😊
And garlic...senza non è pesto alla genovese

The cheese for the most legal pesto in 50% and 50% Parmigiano and Pecorino sardo but, evryone can chose, who like the pecorino can put 100% and the same who don't like pecorino can put only parmigiano. The basil that grow outside og liguria is to strong and smell, good for evrything 3 leaf on a pizza or with a tomato sauce, but not for the pesto.

Farinata is not pizza, it is made with chickpea flour and is a typical Ligurian dish.
@@Sclero80 si fa pure nel livornese, ma si chiama torta di ceci. Credo la preparazione sia identica... 🤔
