    What is that gray mat with green squares called?

      It's a rotary cutting mat. You can get them at the craft store, usually in the sewing or quilting section.

      Good Gosh Ganache it looks like it’s good for when rolling fondant to not stick, does it work?

      It would still require a bit of cornstarch, depending on how well your fondant has been conditioned. Sometimes I roll my fondant out on a silicone mat over this one. That works pretty well without any powder
