The harvest was in my opinion the result of Griffith abandoning his hope of achieving his goal. He had given up hope and attempted to kill himself. Thus activating the festival. Thats why he was chosen. The god hand knew the outcome of griffiths hopeless plan. He never cared for his band... including Guts, from the start.
