Joe wish you a great trip in Taiwan. Taiwan Beef Noodle Soup is a now world recognized. Usually we eat with Chinese sour cabbage( the fermented green you mentioned like the Sauerkraut when eating with pork knuckles ) and depends on individual, some prefer lighter broth ( soup simmer with beef bones for 12 hours ), and some like heavier broth. The heavier broth have soup that are stirred fried all the ingredients like ginger, garlic, scallion with spicy bean paste,and rice wine and simmer in boiling water with Chinese herbs packet like the 5 spice herbal you mentioned, and then marinated with beef shanks to get the more beefy flavor out in simmering broth for 12 hours so all the nutritious ingredients are in the broth. And some people like eat more spicy so they will add chili sauce in the soup to eat as well. 😋😋😋
It looks so fantastic that you can find these local dishes you want to eat. They are not only excellent comfort foods for a traveler, but also wonderful hints to discover hidden gems for a explorer.

If you wish to try the best beef noodle that does not need to wait on long queue, I would recommend you to try 天东86牛肉面, there are 2 branches one near Shilin night market and one near Taipei city hall station. The tip is to go for the second branch to avoid the long queue!

Have you noticed a distinct lack of public garbage bin in Taipei? Last time we visited, we learned to carry plastic bags so we can take our trash back to the hotel 🙂
yes!! In the UK we call them fig rolls... that is what it reminded me of big time. You are right, wooden chopsticks all the way Jim! People will tell us it is unhygienic though hahaha
One thing I must say. Though Taiwanese are friendly and hospitality, our average English ability is a tragedy. Make sure you have good assistance if you go to little counties.
Seem like you really enjoy the journey in Taiwan so that here are more than 1 video about this country. But I gonna tell you that most Taiwanese think there are no good food in Taipei. You should try more cuisine in other cities. Trust me, I'm a chef🤣 Taiwan always welcomes you.
