A simple process nevertheless an impressive one pot of sticky rice dish. The dried shrimps and Chinese sausage are finely diced and folded into the rice enhancing with flavors. Tucked away in the center steaming to perfection are the delicious marinated chicken pieces and to crown the dish the sticky egg yolk takes the centerpiece.

It is interesting how different cultures use similar concepts in cooking. The first dish instantly struck me as a "savory steamed pudding" technique...ingredients that will create a flavor profile normally generated only through direct heat (flame) but finished in a moisture-rich enviornment. This is one of the best cooking channels. Techniques illustrated are repeated over so many dishes that the watcher begins to learn not just how to do something but why doing it is important. A very subtle but very effective teaching method. And notice...no description just ingredients because the chefs intent is always so clear.

These INGREDIANTS he's using also are great in Rice Porage or rice soup which I love. The pork is fried and that root he chopped up is pickled in chili sauce. This sweet rice is also used in deserts like black bean sweet deserts. It's called sticky rice dish.
