Jacques is literally my favorite Chef, a wonderful teacher that provide peace to the chaos. His way of cooking is surprising soothing, simple, and really gives you the confidence that everyone can cook delicious meals, and mistakes doesn't mean failure. Truly amazing.

Grandma and mom would make them served with sour cream or better yet apple sauce!! Didn't HAVE TO keep them warm because Dad,my brother and myself ate them as fast as they were done. Grandma would sprinkle sugar and cinnamon on them for "HER" boys. How she loved us so. Brings back very fond memories. Thank You Jaques!!!

What I love most about his technique is that it is so easy. He never presumes to lord his ability over we mere cooks. It is so obvious that the teaching is important to him. Pedagogues are very comfortable in their skin.
Have made these with his recipe dozens of times, occasionally adding some minced jalapeños, too. Always a hit. And even better looking in real life than in the video, if you can believe it. Golden brown, crunchy, delicious.

I love these! The only thing i do differently is rinse the potato in a bowl of cold water to get the starch out, then squeeze dry. I like them with sour cream and lingonberry jam.
Luv potatoe pancakes..i do the exact samething but i do add a 1/2 tsp of smoked paprika if im making it with bacon for breakfast...if its just to make as a "snack" to use up potatoes, i dont add sp. Snack wise i like to smear on a lil bit of blackberry or orange marmalade jams❤
Been cooking these all my life from my Polish Grandma's teachings. You can't have the pan too hot, because the raw potato has to cook all the way for these to be truly decadent. And just like anything,the second batch is always better than the first. Check for the right temp. on the first batch...get it dialed in.
I went to Wolfeboro NH where my summer place is and when I went into the bookstore looking for the Apprentice, the owner told me Claudine had been there several years ago. Time to ship your kid back up here to perhaps do a wine series.
Latkes! My dad loved his thin and crispy. Rather than grate potatoes (and my knuckles; what’s a latke without knuckle blood?), I eventually started using “Hungry Jack Hash Browns” in the cartons (fridge section). I like the idea of adding scallions.
His aged, twisted, inflamed and arthritis locked fingers are still way more precise, deft and graceful than my 35 year old hands that work like normal. Amazing.
He undoubtedly does have arthritis, but the disfigurement you see in his left hand is actually the result of a car wreck he was in when he was 39 years old. He says that he was lucky to have survived it!

Back at home 60 years ago we used to say that the blood from our knuckles when we used that grater enhanced the flavor of the pancakes!
Oh yeah, in germany we called this "Reibekuchen" or in Frankonia "Backers" and sometimes we eat this with applesauce or with Blood sausage!
