Ingredients You’ll Need: 1 large butternut squash (about 3 pounds), halved vertically and seeds removed 1 tablespoon olive oil (plus more for drizzling) 1 teaspoon salt 2 garlic cloves, pressed or minced 1 teaspoon maple syrup ⅛ teaspoon ground nutmeg Freshly ground black pepper (to taste) 3 to 4 cups (24 to 32 ounces) vegetable broth (as needed) 1 to 2 tablespoons butter (to taste) Directions: Start by cutting off the top and bottom of the butternut squash, then slice it down the middle lengthwise and scoop out the seeds. Set the squash aside. Chop 1 onion and mince 2 garlic cloves. Score the flesh of the squash with shallow cuts in a crisscross pattern, drizzle it with olive oil, and season with salt and pepper. Place the squash, onions, and garlic on a baking sheet and roast in a preheated oven at 400°F (200°C) for 40-50 minutes, or until the flesh is tender and caramelized. Once the squash is done, scoop out the flesh and place it in a mixing bowl or blender. Add a drizzle of maple syrup, the chopped onion, garlic, and 3-4 cups of vegetable broth (start with 3 cups and adjust for your desired consistency). Blend everything until smooth. Pour the blended soup into a pot and simmer over low heat for 5-10 minutes, stirring occasionally. Stir in 1-2 tablespoons of butter for a rich, creamy finish.
we love you dad, i've never commented because i'm pretty shy but i've been seeing your videos since the post someone made and your channel became what it is today, because people could actually find a safe space of comfort and wisdom. thank you for being here for us after all these years and keeping up in your personal life being the best dad ever to your family! remember you will always have a loyal community all around the world that loves you because it has been thanks to you that a lot of us now feel better with life, you rock!
Looks good! One thing I also do is save the seeds for planting - given the cost of groceries going up constantly, I garden in deck pots every chance I get. Just something for the viewers to consider.
I am 45 years old and I father of two children. I am grateful and happy for your videos. Everything you do is great and brings maximum benefit to your subscribers. Thank you for that. I also want to thank you for motivation me learn English. 😊 Thank you so much!
Looks delicious! I love butternut squash soup and actually canned some butternut squash last year, so it’s easier and quicker to make this soup! You can actually grow butternut squash in a pot, if you have space on the ground for it to trail from the pot. I have done this on my patio, living in an apartment!
Sounds nice, in the end it depends on the availability of ingedients - and personal preferences. So, no maple syrup and no nutmeg for my household. But pumpkin squash soup (or, together with other vegetables) a pumpkin-vegetables-cream soup is really great and tasty.
I have seen some of your videos and I liked it, but I found it difficult to understand because, frankly, I am from the Middle East, I hope that you will do the translation position in your videos, and thank you for these wonderful videos. ❤❤

Yum! I put chili powder in mine instead of spices like nutmeg or cloves.
Thanks for the recipe. Do you think roasted bell pepper would be a good addition to this soup?
No cream or even milk?

Dad, how can I cook pasta with grilled sausages?
You can roast the seeds and add salt and you got your self a tv snack (crack it open with your teeth sand eat the inner flesh)
Surprised there's not a mom how do I? as well.
First hiiii how are you doing
Second ❤.
