Might be, though there are other 2021 minivans to check out before we answer that question. And I like the column shifter the most, though I guess you already knew that. And I agree with both reasons about the auto stop/start; especially, once that starter is worn out, I guess your car is stalled sooner or later.
My 2021 odyssey ex, always have “ IDLE stop temporarily interrupted: system warning up or charging” when I make a completely stop, I took it to the dealer, they checked and fixed, but after one day it’s coming back again. Is this normal?
Pacifica offers WAY more. C'mon, you want me to lift out the second row?! Pacifica has the stow and go, no removing seats and storing them! S package on the Pacifica also looks better, takes the sting off the fact you're a man driving a minivan.
Lucky you! You get FCA's 62TE transmission and the faulty solenoids that go with it. You get the 3.6L with defective needle bearings in the rocker arms around 80k miles and engine cooling issues (don't even think that FCA addressed those issues as they haven't). I will take my Honda's 10-spd planetary transmission and proven 3.5L engine any day. Pacifica does have the stow and go which are awesome for hauling, but a real bitch to sit on anything over a 25 mile ride. My sister and brother had back and butt aches during a short trip due to those seats. Anything that is not stow and go is practically a captain's chair recliner!

If remove second row seat. Can I fit 8 feet long items? I know with the second row seats move forward, I am not be able to fit 8 feet long item.
Can we remove middle row seats like this in 2020 Odyssey EXL?
You sure can!
What about remote starter.
...................and what about the Economy button?

So does mine. I just ignore it as I do not want the engine to stop anyway. The thought behind it was shear stupidity, just like on a Ford.
