Nicholaos' Artichokes with Broad Beans

Nicholaos Kondelos' love of cooking was inspired by his mother. As a young boy he watched her closely as she prepared the family meals and her recipes have remained with him since. Now it's your turn to watch Nicholaos prepare one of his favourite spring dishes - Artichokes with Broad Beans - and learn about his migration story along the way too.
This video is Kali Orexi's first 'Raw and Reel' recipe. The footage was captured with a smart phone camera and edited by me. The video is not as refined as our other videos. But what it lacks in technical and documenting precision, it makes up in soul. And the absolute highlight is Nicholaos' storytelling!!!

I was so excited to buy ingredients for my favourite dish, extra excited because I managed to get both ingredients fresh, they seem to just skim each other, the artichokes ripening at the end of the broad bean season here in South Africa.
Once ready to start cooking, I realised I had never made my favourite dish before 🙈, only bought the ingredients for my expert mother to cook, she passed away last year 😔.
& now I needed even more help because my artichokes were not coming out of a can.🤷🏼
I am so grateful for this charming video, it was lovely to learn so authentically, my taste buds, belly, heart & soul are so satisfied after a delicious meal, ευχαριστώ 🙏🏼
