My class made it as a science project with SCOBY's (Symbiotic Culture of Bacteria and Yeast, which is the round thing you see in the jars) and different kinds of teas and sugars. The green tea kombucha was best I think.
The one called "cassava" in spanish is known as Mandioca (and in guarani, our native language in Paraguay we call it "Mandi'o") and we eat it with almost everything, and there are different ways to cook cassava, but the most popular is to boil it.
Cassava is actually really nice. It's like potato but has a Prigles or Lays (lightly salted) kind of taste). You might even enjoy it more than potatoes but it's quite dry and salty so you'll need water.

The North American Elderberry is good for sickness. Allergies, constipation, respiratory issues etc. Helps boost your immune system. An old Native American remedy my dad did a lot of research into when I was younger. He's really into learning about medicinal things like that. Truly does work wonders. Just a small little amount of the concentrate of it and it has helped my family with colds and other issues. Came in very handy when I was younger and constantly got sinus infections. Much better than constantly going on antibiotics and risking antibiotic resistance. Just a very sour grape juice basically and you don't need a lot, less you want a laxative. I guess it depends on what type of Elderberry you're picking and where from. Some are poisonous, some aren't. I guess it really does depend on whether you're handling it responsibly, like with a lot of things.
