So As a Footwear Engineer, specialized in pattern and prototyping development I feel like there are big mistake in the work flow:
I have use plenty of the newest and oldest softwares for footwear development and the best and most convenient work flow is the one that emulates the physical one. Drawing in the last and immediately seeing the modification in the flattening, NEVER THE OPOSITE. you want to remove steps not the oposite.
If I had to flat the last to get the Shells, then digitalize, then digitalize the last, then draw in the flattening and imagine in my head how it will set on the 3d, then "FLOW" it on the 3d last, then going back to the flat to make modifications.... ¡? NO NO NO. In this cases I would definitely ratter to do the Development by hand. You are adding unnecessary steps to the work flow process. Steps that makes you invest more time to your process ( and this time can already be saved)
footwear development softwares (the ones that are really going into the correct way) gives you the facility of processing the shoe last (which in many cases also include scaling it and preparing for its manufacture). After that you are all set to draw on the digital 3D last and simultaneously seeing the 2D or flattening being created. Drawing in 3D will shoe automatically in 2D
