    I've been hearing that wild yeast is no good the few years I've been looking at wine making on line. Now I been making wine about 40 years from the wild mustang grapes that grow on my land. There is no need to add yeast because the wild yeast is already on the grapes. I must have a good strain of yeast on my property because I've never experienced any of the problems associated with wild yeast. When I make watermelon wine is the only time I use commercial yeast, I use a fast acting champagne yeast as watermellon tends to sour before it can ferment.

    The mistake you made was adding extra sugar at the begining. You should have waited a few days before adding more sugar.

    Hmmmm, can't help but think that if you used more wild yeast you would get a quicker result. When you rack it off see how must yeast has been created, I predict the long time was due to it propagating enough to eat all that sugar you gave it. Personally I think you overdid the sugar. Damn interesting experiment though.

      Right on the money Percy.
      Taking off the fail, it took a little over 2 weeks to end.
      You are right, if I cultivated more starter yeast it may have taken less time to come to a conclusion.
      And right again, there was too much Dextrose in the mix. If I was going to do it again I would use stronger more established Natural yeast, use no Dextrose, and make a dry run starting at a potential 5.5%ABV. I feel the end product may taste more like Watermelon.
      BTW, I gave the wash a 15% potential ABV because it is part of a batch I intend using to make Watermelon Brandy within the next fortnight.
