kinda of a cool idea but a smoke tube or smoke box on one of the smoker trays seems significantly easier

The main reason is to reduce temperature in the smoker.

Don't use a galvanized mailbox.

Zinc contamination. Inside your oven, you'll notice that it's not galvanized, but coated with ceramic. Same with a lot of other cookware. Zinc isn't something you want to heat near food, or use in direct contact with food.
