Can't wait until rhubarb comes up this spring to make a strawberry-rhubarb variant! Girlfriend loved them, too, and took some to work to give to her fellow nurses!

@@Mia.G I used coconut flour instead of all purpose, Swerve brown sugar instead of light brown sugar and regular Swerve instead of sugar, as well as xanthan gum instead of starch. Everything else - I followed the recipe. Oats are high in carbs but are a good source of fiber and vitamin B, so I didn't think that was too bad. Their recipes in general don't require too much flour or sugar to begin with, which makes it easy to make it low carb with propoer substitutes.

My husband isn't a huge fan of flapjack (whereas I love it) so I'm really really curious to see what he thinks of this since it's not quite a flapjack and it's bursting with those strawberries. Michelle Heck yeah. I would mix a in a little cinnamon/apple pie spice. And if you are a fatty like myself, drizzle a salted caramel on top. The only thing is, it's berry season in most parts of the US. Eating in season will make it less expensive and taste better. Berries shouldn't be too high right now. But do what makes you and your palate happy. 🤗
