The Perfect Summer Potluck Jello Salad!

- Hey, guys! Thank you so much for watching another recipe video. I know this channel is mainly about agriculture, but the recipe videos are just fun for me to make. Now I know this is a random assortment of ingredients, but trust me, it totally works…..like I said a million times in the video, just trust the process 😉
Jello Salad
1 20 oz. can of crushed pineapple
1 box of Jello (whatever flavor is preferred)
1 8 oz container of Cool Whip
1.5-2 cups of cottage cheese
1 10 oz. bag of miniature marshmallows (optional)
Pour pineapple (don't drain) into a shallow, microwave-safe container and nuke for 1-2 minutes. Stir in this order into the crushed pineapple-Jello until dissolved, entire container of Cool Whip until mixed through, then the cottage cheese until mixed through. Spread the miniature marshmallows in a single layer on top (optional). Put a lid on the container and put it in the fridge until set.

Hello Erin. I'm so sorry that you have bronchitis. Praying for it to clear up. I may be wrong but I've noticed that you have the unfortunate luck of having a lot of sinus problems, leading to sinus infections and bronchitis. I feel for you, because I am the same way. Here in Indiana, spring dust and pollen was really crazy this year. I enjoy your cooking videos, fairly easy and quick recipes for people that are busy and short on time.
Youre on your way to 100k, Erin. Im sure when you get there, that your stage fright will diminish, and youll be a natural by then. Chin up…keep smiling…youre doing great.
I remember a version of this with green jello and fruit cocktail.
I'm the youngest of seven kids. My mom would make this for family get togethers but more often made it when she new I was coming to visit.
Mom's been gone for 16 years now and though she gave me the Tupperware Jello dish she always used I never had gotten around to figuring out how she did it.
Saved this to my cooking list, think I'm in business. 👍
My grandmother did the same thing , but with green jello.. she passed back in 85, but we still have it at all the holidays...

We do basically the same thing down south, but the first step is always take a piece of masking tape, write your name on it with a sharpie, tape it to the outside bottom of the dish to make sure you get you dish back and then proceed from there.... Lol
Erin, you're so funny !!! I hope you get better soon. My mom always made this when I was growing up. It was really really good, she used lime jelly all the time and NO marshmallows on top, thank God. I would love to try cherry jello someday.
Good stuff! My late mother-in-law grew up on a Minnesota farm. A measure of a family's affluence was the number of boxes of Jello in the cupboard.

I grew up with this except my mom used lime jello with the crushed pineapple, cool whip and cottage cheese. Our family loved it!

Last time a gorgeous girl from Indiana said, "just trust me" I had the time of my life, she knew all the cool places to visit in downtown Indy, best places to eat and very affordable. Girls from Indiana seem very grounded and very attractive.....
My mother has been making basically this exact dish as long as I can remember, but instead of pineapple she uses fresh raspberries and raspberry jello. It's been a staple at every family get together and holidays. Thanks for sharing this one I'll have to give the pineapple a try.

My grandmother used to make basically the same dish years ago before she passed. Now my mom makes it periodically. Occasionally she'll substitute a fruit cocktail rather than a single kind of fruit. Always was a favorite though. Thanks Erin have a good wknd.

I made something like this today.
I mixed chilled marinated plate sized slabs of US beef , salt, chill flakes, rested for 8,6,4, minutes in my grill, added some Lea & Perrins Steak Sause to finish.
Wish you were here, was delicious!
Should have used all that Jello. imho. lol!

My mother used to make this Jello dish with Lime Jello,Pineapple and Pineapple juice,cottage cheese and whip cream not sure what it was called but it was good.Hope you feel better Erin hope you and your family has a great and safe 4th of July.

My mother made that for us when we were kids, orange jello with shredded carrots...
I grew up having Jell-O salad.. in California! My grandma's recipe uses pineapple and mandarin oranges interchangeably (and drained) and she would also add pecans (never marshmallows🤢) . We put it all in a bowl and use a hand mixer to blend then refrigerate. I love it so much it was on the menu for my rehearsal dinner! oh yea and never heated the fruit, my grandma never had a microwave 😉

Hi Erin, I love the dish you shared. On a hot day, it is cool and yummy.
When I make this recipe similar to this, I use green Jello and put chopped pecans in it, but I am a pecan nut! I love it! Going to have to try the cherry Jello.

You know Erin if you wanted to, you could have put a layer of crushed biscuits on top. Might I suggest Digestives if you have them or equivalent.

Jello Salad was at every potluck all summer long when I was a kid; including the time we all watched the storm come in over Lake Michigan with a front cloud that rolled like a rolling pin. The storm hit with sudden high winds that put sand in all the remaining food and paper plates got sent to Canada so to speak!

Grew up in the 50's and 60's drinking Kool-Aid (made with half the recommended sugar) and Jell-O deserts. My granny made excellent Jell-O fruit salads with fruit grown on the homestead.
My grandmother made this and added walnuts . Sometimes even celery..you're right I could eat the whole thing myself..
