      I made this tonight for dinner (alongside some soy maple chicken tenderloins and a cucumber salad). I adjusted the veg to suit my intolerances and added enoki mushrooms too. Honestly roasting the veg is simply GENIUS. Thank you! Definitely a go to recipe from now on 👏🏻

      I just wanted to update, I've been doing Japchae for years and this is by far the best way and flavor to do it. The only difference is that I add spinach and kyng oyster mushrooms. Sauce is delicious ❤

    I enjoy your recipes. Glass noodles are a delight to me because I have diabetes. When I have them I feel like finally, I am more like everyone. Thank you sir.

      Please try Japanese shiritaki YAM noodles. They are sold in small plastic bags in fridge of Asian markets. Before use, drain liquid and boil yam noodles for 2 minutes in water. Discard boiling water. Don't eat more than 1/2 cup because very high fiber. Once your system adjusts you can eat more. Great in soup or with veggies and seasonings like chapchae seasoning. Really fills me up. Great for diabetics too. Also sold in jello lime bars clear or with added seaweed on the brownish bars. Konyakku is the Japanese name.

      For those with food allergy problems, one can use sweet potato noodles from the oriental food store (too expensive from Amazon!), instead of rice or bean noodles. Works well!

    Just made this and it was FABULOUS. We didn't have green onions nor the gochaguru powder. We used gochujang paste. It was still wonderful!

    I actually like the fact that you roasted the veggies that you used. Mostly because I think roasted carrots are sweeter than literally any other way you could cook carrots. I also appreciate the tip of removing the stalk of dehydrated shiitaki mushrooms. I just bought a bag of those to use for a vegan lasagna recipe. I wasn't expecting the bag to be so large. And the bag I ended up buying was the smallest one available at the Asian store I go to.

    Other chefs seem to take a different approach when showcasing their expertise. But you took an approachable tact mindful of homecooks " handicap" - lack of formal training and experience in gourmet cooking. But we all love delicious food like the "Michelin delicious" at a budget money and time wise. You fulfilled that in this tutorial, greatly appreciated.😊🤩

    this was delicious--sheet pan version is a great time saver! minor variation: use a small skillet to make your sauce then dump rinsed noodles and sauce ONTO sheetpan with veggies and mix. I added some fresh tender spinach at the end and let it wilt in. FYI: I never bother with parchment paper (extra garbage for what??)--sheet pans are easy to wash and can go right in the dishwasher. They will discolor but I think the patina is lovely.

    I just made this recipe. It is delicious. I am not an accomplished cook. I didn’t time the roasted vegetables well and everything was pretty mushy. I added celery to the scallion sauté just for crunch. The household loved it tho one of my friends said, “No chewing required it slides right down.” Pay attention to roasting time unless you don’t want to chew your food. I love this channel. Even if you mess up the recipe, it still tastes good.

    The background music is well handled. It fills in gaps in speech, but doesn't overwhelm Mr Yeung's voice. And it perfectly matches the mood of the video. (I can think of other creators who could benefit from this example!).

    To be honestt this one is the best japchae recipe so farr! The technique is not only saving time but olso elevate the dishh! I love how you cook the sauce to enhance flavour unlike other recipe that use raw garlic on soy only (not that i hv any problem with garlic on soy, I'm just saying this is a smart recipe).

    I’ve never seen it made with gochugaru but I guess if you like spicy that works. Usually it’s just soy sauce, sugar, and sesame oil. Very simple

    Jabchae is my favorite Korean noodle dish. It taste good warm or room temp. Great to make for a crowd. I use brown sugar or plum syrup instead of maple syrup and add in blanched spinach. I like to saute the mushrooms separately to get browning on them. I like to keep the veggies more crisp so not a long cook time there.

    I’ve just cooked this dish with a couple of subs, but the sauce was exactly as you directed. Absolute bliss! Have done it the traditional way in the past, but this time with your suggestion to roast the veggies. The result was a sublime, smoky flavor that’s out of this world. Thanks muchly for a lovely Friday meal with the family. Gorgeous! Shall definitely cook it again.

    Thanks for sharing this recipe!! I tried the Korean powdered pepper with sprouts and green onions in Tokyo lately and loved it so much! The glass noodles I kept seeing at the grocery store in LA selling different kinds of Asian noodles but was hesitant to buy:) Now I know how to put them together! Looks very flavorful and beautiful! Oh and the mushrooms and garlic and veggies … great combination 😌

    OMG, this was fantastic! I didn’t have that particular spicy element, but I did have something else that I think was similar that I added along with some fermented bean sauce and holy smokes this was great! I added too many noodles so I double the sauce and my husband and I loved it. Definitely going on the regular rotation, thank you so much.❤

    I love your recipes although I alter them to fit my budget. ( I am a senior on a small budget). I use dry veggies that I bought in large bags from an Asian Supermarket. They never go bad and I don’t have to buy as frequently. My oven stopped working a while ago so I use a toaster oven now. It works great for roasting veggies! I love your veggie combination. I will try the smoked tofu. What a nice idea!

    Thank you. I love glass noodles, but other than in an asian market, they're not too easy to get a hold of. (Was under the impression that "glass noodles" came from sweet potato) . Beautifully textured dish.

    Finally made it tonight!! No smoked tofu in the shop so used a sate tofu. No shitake mushrooms so used what I had and my glass noodles were sweet potato. I have to say, it was delicious 😋
