My grandmother used to make peanut brittle and the minute she just got the baking soda stirred in, she would quickly dump it onto a buttered sheet pan so that the air bubbles are still in the candy. This would cause the brittle to be very light and airy. Making a delicate brittle. The more that you stir the less air bubbles you'll have. Making the brittle harder
@treeissaved2359 And that, right there, is the wonderful thing about making brittle. Some families, like yours, prefer the lighter air-filled brittle, and some, like ours, prefer the more dense structure. Either way, I am not turning down a piece of homemade brittle, as both are delicious!
Never seen haystack candy with coconut. Here, it's made with crunchy chow mien noodles and butterscotch chips. Guess I'll have to make both ways this year. Oh the horror!😂
I was also surprised to see that using chocolate & shredded coconut is also called haystacks. I bet it would be great to combine both the coconut, the chow mien noodles & then your choice of chocolate chips or butterscotch chips
ohmygod you have _the best_ husband. Star Trek references, supportive comments, finds _all the things_ SUPPORTIVE COMMENTS!! for the actual win though.
I have my granny's peanut brittle recipe as well. she only used a cup of ice water to test temp. BUT it worked for her. I use thermometer lol. My grandfather used to call it peanut BRUTAL
I loved all your recipes. Especially the Coconut Haystacks and the Brittle, I make mine in the microwave. BTW your hair looked beautiful so did you, I was just thinking you would make a Beautiful Mrs. Clause. Thank You for your recipes. Merry Christmas ⛄🎁
You forgot the Vanilla in the toffee ! My boys won't eat toffee without pecans and vanilla. I also put hazelnuts in my food processor and add hazelnut powder on my toffee as well.
If you cooked the first ingredients until when you stir it, lift the spoon dripping in the pot, it will stream a string about 18 inches long then add the raw peanuts and cook until golden brown. Add baking soda butter and vanilla. Stir and spread on a buttered cookie sheet.
On a cooking show for chocolate peppermint cookies, it was pointed out that different brands are different shades of white & cream colors for condensed milk.
Nice to see you on a new " channel"! ☺️. I bought two of your cookbooks, Living on a Dime, copied my favorite recipes, and gave the books to my daughter since she has young children and cooks more than me! 😊 ( I have the same microwave you do. I love it! )
I have made peanut brittle since junior high. I however had an actual candy thermometer. And it has all the actual soft ball, hard ball, soft crack, and hard crack measurements . It was the only peanut brittle that my grandpa could eat and he was so happy. It was his favorite. I had to make at least two batches every time. It just melted in your mouth. It became my favorite too.
When you get water in chocolate, it will seize. Food coloring has some water. If you add it too quickly it will seize. If you need to add food coloring, add it a drop or two at a time and thoroughly stir it in before adding more. My friend, Tom made Grinch Balls (Mint Oreo Balls dipped in bright green white chocolate) on his channel, Come Sit at My Table. He demonstrated how to add the coloring to his white chocolate. BTW, he and his wife are Dave Ramsey fans and went through the program years ago. Now they are living their best life!
You must use an oil based food colouring with chocolate, water-based ones will screw up your chocolate. If you toast the coconut before you put it in the chocolate, it will taste so much nicer
It will last for at least 4-6 months as long as u keep it in the kitchen or an indoor pantry. We give our dogs coconut oil in their food once/day, and I just keep it in the kitchen cupboard.
❤ N I'm so glad I got a Fudge recipe n only two ingredients wow how easy ...tyfs yours ...My family has been asking for my fudge on Christmas Eve n I didn't make any but ,now I will for New yrs ... N Happy New Yrs to u & ur sweet hubby ....💕
I just found your RUclips channel and I am enjoying it very very much right now. You’re making Christmas candy but I am going to skim through and see what other videos you have there. I wanted to know what part of Wyoming do you live in? I actually live in Wyoming too so hello neighbor, my name is Bernadette. I live in Powell. It’s just so great to find somebody that has a RUclips channel congratulations I know you’ve probably had this for a while but anyway let me know about where you live. Not exactly where you live. I don’t need that but just the area that you live in like I said I live in Powell and I am gonna be 72 years old pretty soon.😊
Love your recipes....gonna try them for sure. The chocolate color didn't work because you need oil based colors and not regular colors ❤ Watching from Sweden.
I make an absolutely delicious, crunchy and light peanut brittle in 14 minutes in the microwave.¹ No candy thermometer needed. Looks and sounds (crunch factor) just like yours. It is so easy and fast that in about the same amount of time (assuming you have 2 8 cup Pyrex measuring cups and 2 silpats) 3 batches could be made and you could keep one complete batch for yourselves and not short the batch you were sending to your mother. LOL. It's also a very versatile recipe. You can vary the nuts and/or the extracts, use mixed nuts or even add additional ingredients (if reducing the amount of nut ingredients proportionally) by stirring in with or just after the baking soda and working quickly. Some nuts do cook or brown more quickly than others and may need to be added at different times. Because the microwave makes the brittles so much faster I haven't found this to really be a problem but there are so many nuts available it might depend on those you use. Softer nuts like walnuts, pecans, those round Hawaiian nuts and seeds like sunflower would definitely need less cook time in the syrup. Have fun with it. I even added ¼-⅜" wide coconut strips seconds before the baking soda. It was a great addition. While the syrup is still very hot, remember that when using the microwave method you are not adding external heat once your Pyrex is withdrawn from the oven. My recipe calls for the same ingredients minus the water. I suppose the water is to prevent the sugars from burning. With all of that stovetop boiling to reach temperature the water must provide the required extra moisture that allows the cooking process to reach the needed temperature. Microwave peanut brittle recipes can be found online. Since you use your microwave in several of your other candy recipes you might like to try it for your peanut brittle at least once. ¹(using a 1000-1200 watt oven. If 1200 watt decrease cooking time by 1 minute after adding nuts).
❤ Im so glad I came across my screen tonite , Cause I lost u 😮 I was a subbie for yrs n u were not on my list in my Utube channels 😮 So thank goodness , I just subscribed tonite ❤
Hi from New Zealand we call them chocolate buttons here. Nice cook bòok we cherish recipe books too. My mum had lovely hand writing when she wrote recipes.
Some of us are allergic to all nuts and peanut butter. Do you have any recipes that do no have nuts or peanut butter in it? I like the coconut recipe. Also the bark candy.
Not food related, lol. BUT I sometimes see you having such pretty nails in your videos! Do you get your nails done or do you get press ons? Loveeeee your videos!
✍ Hello...First time watching your channel. You're so right about that shot killing your Aunt. The same thing happened to my best friends husband. By the way my grandma always put some vanilla in her peanut brittle. Love Hay Stacks... can't imagine using crunchy noodles...yuk ! Good Night 😴 God Bless LuvYa! Bye from Ohio🌹
When you make the cherry mash candy youhad can of sweetened condensed milk and it was a little darker than normal ! It probably was cooked to long ! You can simmer sweetened condensed milk for 15 - 20 minutes in the can and make caramel with it 😋 😂
Your melted chocolate “seized up” because you used regular food coloring, which has water in it. You have to use a gel based food coloring in melted chocolate.
I tried your two ingredient fudge. We didn’t eat it though because after I made it, I noticed black rust or something on inside rim of the sweeten condensed milk. What can it be. The cans will still within the date of the can. I was so disappointed because I’ve wanted to try it and now I have to wait to buy more ingredients.
The reason your chocolate is seizing is because you're using water-based food coloring. Water seizes chocolate as you you well know. When working with chocolate, you must use an oil-based food coloring. Hope this helps!❤
I used your fudge recipe and put Kit Kats on the bottom of the pan, poured the fudge over and topped with crumbled Kit Kats. Yum!! My hubby isn’t a fudge fan…but loved it!
If you heat your nuts some before adding to the pot. The syrup won't instantly cease because the nuts are cold, colder than the syrup. Also I use 2 Tablespoons of baking soda. Fulffs up the cand amazing, keeps those bubbles, and cand is much lighter, not so hard.
Back in the 70’s, I made a lot of peanut brittle using raw peanuts and a candy thermometer. It seemed to take forever but was delicious. Fast forward to 2015, my kids admitted they didn’t like peanut brittle. So I started making it in the microwave with roasted peanuts. A lot less work and tastes just as good.
I like to make 'instant' peanut brittle. Melt a package of Turbinado sugar in the raw in a frying pan, then add peanuts, or raw walnuts, stir and dump out on wax paper cool and break to pieces. You can do this in the microwave too, but it cools so quickly that its difficult to break it into smaller pieces. I gave out one of my Grandmothers recipes in xmas cards this year. It was fun, all the memories, she also taught me how to make real fudge. She always had a batch waiting for me when i visited. Oh, she taught me how to make flakey pie crust too. 😍
I should have watched this again first. I was stirring the brittle mixture. Hope it comes out well. Thanks for the recipes. My husband loves peanut brittle and I've been afraid to cook it. Edited to add. It came out great! Yeah!! Thank you. It's a gift for my husband as we decided to do all homemade this year.
I caught that too… so many people lost their lives because of the lies told… thankfully, there were a lot of us whose eyes were opened up a long time ago… now, more are coming to the light!!! Have a blessed day!😊
I almost died right before the v, when a Dr.kept harassing me to take a fle shot. I got pneumonia really bad that I could not go to Christmas dinner 2019. Healed myself by drinking pepper corn and ginger tea. I learned my lesson and did not go in for the v or boosters.
May I share a tip I learned from another RUclips cook? If you tightly wad up your parchment paper then uncrumple it and mostly smooth it flat again not only will it stay put on a flat cookie sheet but it can be shaped to fit different shaped pans too. Especially when you snip the corners as you did. Works for me.

Do you have to refrigerate the fudge
@@Katherine-zk5zj yes.

Absolutely! Same !
Same here and I put vanilla in it as well.

Yes, we grew up making it with different things...nuts, favorite flavor of chips, raisins, M&Ms, etc. 🙂
Marshmallows!
This week, I'll be making Christmas candies to give away as gifts. I love the variety of candy recipes in your cookbooks. Thank you!
Love it! It is just like the once you used to do 👏🏻 I love to watch you cook. Hope you are having a great weekend.
I'm impressed that you have a grandma who is still alive! All of mine passed long ago. 😢 congratulations ❤
Yes although she is in the hospital now and may or may not make it but I would say being 51 with a living grandmother has to be some sort of record.
I toast my coconut in the oven when I make my hay stacks. Lol. I love the texture. I'm weird. Lol
ohmygod you have _the best_ husband.

HA HA HA His sound effects are great..I've made the 2 ingredient fudge. I also ad walnuts & mini marshmallows to make it into rocky road fudge.
FYI: I buy the big bag of semi sweet chocolate chips from Costco. 2 cups of chips equals 12 ounces.
Merry Christmas and thank you for the recipes.
That's good to know!
1 cup is actually 8oz
lol! I LAUGHED BEFOR YOU DID WHEN YOU OPENED THE FRIDGE! Looks LIKE MINE!🤣🤣🤣 Mushroom soup? HAHA!
Hi Tawra everything your making looks good ❤

To make your 2 ingredient fudge taste a bit richer add a bit of vanilla flavoring!!
Yes, you can also add 1 Tbsp. butter too.
I think if you had added some coconut oil, veg oil, or butter you probably would've gotten the right consistency to make the red swirls in your bark.
New sub, LOVE your channel!

I make turtles with pecans and a rolo on top

thank u!
Some of us are allergic to all nuts and peanut butter. Do you have any recipes that do no have nuts or peanut butter in it? I like the coconut recipe. Also the bark candy.
Truffles, barks, caramels, mints, applesauce candies, all are in the link below.
Just make it without the nuts.
The one in the pan is accurate. It's because it's sumerged in the hot LAVA.
But it read cooler
I'm new subscriber and i love your hair.
Your condensed milk is darker because it set in a hot environment. It turns into the best carmel sauce if you leave it in heat long enough.
Your hair is BEAUTIFUL WOW
Anytime I've seen haystacks made, there was never any coconut involved. It was always made with chow mein noodles.
Yummy
I think you forgot to put vanilla in the peanut brittle, it should be added when you add the baking soda
Love all of these candies!

Use a ice cream scoop or cookie scoop to make your haystack. It looks neater and more presentable.
OMG!!! we really don't care about why your recipes are different about the peanut brittle.! Just make it
Maybe it’s a difference between a soft brittle & a harder brittle?
After it’s set, will the fudge melt if I put it on a serving tray on the table?
not unless it's super hot in the house.
❤
I don't like peamut brittle!!! I put cashews instead of peanuts!!! Cashew brittle is the Absolute Best!!! God Bless Us All!!!
How long do you refrigerator the fudge for 😂
Cook to two thirty and peanut now then cook to two sixty a hard crack😊

Use only oil base or powder food coloring with melting wafers
Our candy places only use 3 pecans. Im 73 and never saw any other way. Merry Christmas to all.

Yes I realized I used the wrong one but have to keep moving forward. :-)
That's what they are called candy waffer's. Where are they located in the store and what store's ?
Wal-Mart has them over with the decorating /birthday /wedding items. In my store that section is over by the greeting cards.
If you have a Michael's they have a bigger selection. I don't know about a better price though.
Love your big jug Tawra, where did you buy it ❤

sounds like the seal was broken on your can and it was mold.
Bummer. Hope you can make it again it is really good.
You will never find those melting wafers that cheap here in Alabama that cheap. The cheapest I have ever gotten them on sale is $1.49 a bag

You don't give measurements therefore it is goodby to your recipes.

I want to make black walnut brittle. Could I use this recipe without adding baking soda?
I love watching/ listening to you two! My husband proposed to me about 5 months after we met, married 1 year after we met. 32 1/2 years ago ❤
My amish friends in her 70s or 80s makes this almost daily for her store, and she stirs constant once the nuts go in. So trust grandma's recipe
I used your fudge recipe and put Kit Kats on the bottom of the pan, poured the fudge over and topped with crumbled Kit Kats. Yum!! My hubby isn’t a fudge fan…but loved it!
