I learned that if you boil boudin you can't stuff it tight. The rice will grow and burst the casing. Your recipe is the most authentic on RUclips. I'm a technician for a sausage machine company and have seen many boudin kitchens. I have also learned that when you leave Louisiana no one knows what real boudin is. Some people even make it without rice.
You sir, are the man! Been cooking for over 40 years, all cuisines. Been trying to recreate then awesomeness of Cajun food/recipes while, trying to master Jamician jerk. (I lOVE good, strong flavoring.) Your video at least, but me in the "ballpark" for authentic Cajon/Creole food. A sincere thanks again!
I actually followed this recipe to a T. I used the the sausage stuffer attachment in my kitchen aid stand mixer and it came out great! My family is from lake Charles and good boudin is impossible to find where I live now. I tweaked some of the seasoning amounts for my own personal tastes and it came out fantastic. Thank you so much!
I learned to love cajun boudin when I was at Ft Polk La. and I was dating a sister of a buddy in the Army. My buddy and I would take off the weekend go to folks place along the bayou in south Louisiana. Every weekend they had great cajun food and his mom and sister would send some smoked boudin back with us. "Laissez les bons temps rouler!"
I really do like your recipe nothing fancy you keep everything simple and I really love! The fact that you don't put your meat in a grinder you cook that sucker down till it falls apart I like that that's the way I like to cook thank you!
Going to a HUGE family reunion in New Brunswick in August..... I will be honouring the Boudin sausage as part of the Acadian tradion and culture... thank you for posting... be well, eat well and long life....
Fantastic! Finally a video that shows what sausage really should be. In Slovakia, this would be called Jaternice, and we use barley instead of rice, sometimes buckwheat or a portion. One thing is to cook the grain or rice in broth from the bones and trimmings of the pig. The fresh onions at the end is a great idea, maybe some oregano or thyme also
I LIVE IN THE UK BUT I WAS BORN IN LOUISIANA AND CAN ONLY REMEMBER THE WONDERFUL TASTE OF BOUDIN, TOO BAD IT ISN'T AVAILABLE IN THE REST OF THE WORLD. WELL DONE VIDEO, I NOW SEE HOW IT WAS DONE WHEN I WAS GROWING UP.
Heath I just made 26 pounds if your boudin. Best I've ever had anywhere! I used to work the oil patch down there and really loved it before I retired. Great channel man!
HOT DAMN !How wonderfulllll. I love it. I love Boudin too. I was born and raised in the Tennessee mountains, we never had nothin like boudin. Bout all we had was Himalayan Possum stew. Mama found them Possums....found Himalayan right there beside the road , drug him home ,and stewed him right on up. Yumyum HOT DAMN!
Hey Heath--Had to tell you that this NC man finally got the info I needed to make some wonderful boudin. I got alot more flavor by following your technique than anything on youtube !! I so much appreciate the time it took to make the video ! If mine came out that good, I cant imagine how good yours taste !! I was ordering from Poches and Cajun Grocer but you really pulled it all together for me !! Thanks again and if you are ever in NC---HOLLAR !!
Oh man....oh man.....Being from (gasp) up north, boudin was something I could only read about in cooking-type books. Then my wife's gig brought us to Houston, and I realized that I'd be driving I-10 (& 12) thru Louisiana...needless to say I must have stopped at 6-10 places along the way, from large almost touristy places just off the exits, to old block buildings way off the main drag, mostly around Breaux Bridge...and man was I not disappointed. It has become an absolute fave, and your video laid it all out just great. Kudos, looked fabulous.
Thank you Heath, I have been "tweeking" your "Classic Boudin Recipe", trying to make it my own and I could not have done it without your help. Merci beaucoup!
Absolutely FANTASTIC!!! Damn, I love me some Boudin. Even though I'm from the hills of east Tennessee, and have eaten a lot of hog sausage, this stuff , with them rice, ononioynz, Dem livvahs, dem seasoninns, all dat pepper, all dat pig meat.....It just ain't nothin' no darn better than BOUDIN. I love that stuff......especially with about 20% crawfish tail meat down in there too! ( With a little more cayenne, just for flavoring up all that good stuff.)........YUMMMMMMMmmmm
Heath made 20 LBS of Boudin following your recipe and directions and it turned out great!! Thanks for the recipe and instructions, I miss being able to get Boudin locally.
Yumm damn yumm. These Oregonian people dont know what they are missing. Married me a cajun girln37 years ago. Sure enjoy visiting my in laws. Born Texan, loves me some boudin.....
First off, I loved your videos. One time I asked a guy in Lafayette, LA what went into Boudin and he told me, "Everything from the rooter to the tooter."
I could almost smell that boudin from here in GA. Liked what I saw. Meat cooked in the pot all the way to end. What's next on the menu ? Maybe cabbage rolls stuffed with boudin..peaches on the side and corn bread..
I still remember the smell of the cork lining of our old ice box. It was primitive, but we ate real food, with no soy powder, fructose syrup, gelatin, bleach, GM anything, or preservatives in our fresh cooked food. You can still eat that way…..if you are willing to cook.
Lord have mercy. this was the greatest thing I've seen on RUclips this far! I love my heritage! thanks for sharing now I have to go order me some boudin.
Hello Heath Thank you for showing the basic . And beings i'm from Lincoln Parish now living in Sioux Falls South Dakota one thing I know is that the cooking lessons that my family tot me served me well up here. Winter time is coming and and already have people calling me to make so good ole Louisiana cooking . So i'm happy to be a new subscriber . And keep making those videos and i'll keep watching ...
Thank you so much for showing and sharing how to make boudin now that I am no longer truck driving and live so far from La I have been in D.T withdrawls for some Boudin I truly THANK YOU WOOHOO 100 THUMBS UP :)
Can't wait to try this! I visited LA and couldn't get enough ! Yum! Thank for the teach & love your equipment! Better give your wife an extra hug for that great mixer!!! :)
Love Boudin. I haven't had it since I was in Louisana about 13 years ago. I miss it and I live in Wisconsin. Hard to get it, when you live this far North.
great video thank!!! you bring tears to my eyes with all of your equipment. I have been processing my deer the last two nights all by hand... a lot of work as you know.
OMG That's the Boudin that looks like the ones I use to eat down by Franklin . I hauled Carbon Black . Drove for Tri-state Delivery Trucking Company. I am going to try and make some I love Boudin. :) Thank you for sharing.
Bless your sweet heart for sharing this recipe!!!! I'm an Alabama girl trying to learn how to make boudin...im gonna follow your directions! Blessings & Sweetness to you and yours!
I literally had to search thru RUclips to find this video again. I watched it 3 years ago and I remembered that you had a English Mastiff just like I did. (Sable passed away 3 months ago. She was the best dog I ever had) I'm making sure that I keep this video close by.
i dont eat liver but i have feel in love with Boudin. i tryed it like 2 years ago and loved it im not from New Orleans but whoo buddy it is good. my kids love it just as well there father is from new Orleans . im from Jacksonville Florida and they sell it in Wal-Mart here yesss!! we go in on it when I buy it lol
Okay, I am not Cajun and I'm not from Louisiana. My wife is from east Texas, however, and I am from coastal Georgia (Savannah). Let me tell you this........I LOVE boudin!!! My wife introduced me to boudin balls at a local Cajun restaurant and let me tell you.......I can't get enough!!!! My only problem is with the spicy hot level. I wasn't raised with spicy food, so I don't care much for the "heat" in a lot of food, but this........ahhhhh yeah, I can tolerate this spiciness, as long as I've got something to cool my mouth down with while I eat it. This recipe looks damned amazing!!!!! Thank you for sharing it!!!
We live in North Dakota, where it is impossible to find boudin. My husband is from Lafayette and when i made this he said it tasted very close to home. So thank you!
I know it's probably not the most traditional, but you can try your local Wal Mart and see if they carry Zummo brand, or you can order it from them directly. A friend from Louisiana swears by Poche's market and they do mail order as well.
This is the first video I ever saw about making boudin. I loved your video. I have seen others now but yours is far and away the best. So informative and well done. Keep making videos sir.
i had to come back to say thank you, i live out of state and its hard for me to get home i just finished making some for my family ☺ les le bon ton rule!!!
I wish I could find some around here in Tucson..I miss it! Been many years since I had it.. the thing I remember the most is that it is different everywhere you go ..one part of Louisiana they have one way the the other side of Louisiana it's a different way.. but it is all good.. fresh or smoked..loved it.
Bravo vive la tradition ! That is a lot more work than I expected...I will try your recipe with what is available in Australia ;) Thank you for sharing your knowledge.
Love the video!!! I'm from Alexandria, LA. and to am a huge Tiger fan. Will you consider doing a crawfish boudin video??? You did an amazing job on this one 👏
Awesome. Love my people from the boot. "Ice Box" Haven't heard that in a good min. Thank you for the lesson. Will try to make this for my Creole and Cajun Restaurant here in Japan. :-)

Drinkin another beer while you're cooking is an INTEGRAL part of Louisiana homestyle cuisine!
Or a glass of wine! Nevermind me tho... I'm just here for the comments. 😁
Where did that casing come from?? What company???
I learned that if you boil boudin you can't stuff it tight. The rice will grow and burst the casing. Your recipe is the most authentic on RUclips. I love boudin also. I remember watching my grammas make it when we visited family in Lake Charles. Love my heritage.
I’m in Lake Charles. Well, right next door to it, in Sulphur.
You sir, are the man! Been cooking for over 40 years, all cuisines. Been trying to recreate then awesomeness of Cajun food/recipes while, trying to master Jamician jerk. Oregano should NEVER EVER be in boudin, NEVER.
