What do i have to study for to get a degree suitable for a job on the amg family, like building engines?

Engineering! Mechanical engineering would be the obvious option, but there are a variety of roles, so electrical / electronic engineering, materials engineering are also options.

You can see in the video he’s working in CATIA. I’m sure they use other programs besides catia as well

If you look at the Careers page of the HPP website, you'll see an advert for Mechanical Engineer that states Siemens NX would be the preferable CAD experience, so you can try and draw conclusions from that...

Probably mechanical engineering in his case, with a focus at some point on ICE and/or other drive train elements.
But electrical engineers, materials engineers, aerospace engineers all would have places I would think.
