Fantasy Forest Cake RECIPE:
For the CAKE:
Ingredients:
• 2 boxes of white cake mix (or your favorite white cake recipe - enough for four, 8-inch round pans)
• Eggs, oil, and milk according to cake mix instructions
• 16 ounces of fresh spinach (can use frozen if fresh is not available)
Directions:
1) “Hit “play” on your favorite Harp Twins album or playlist!
2) Pre-heat oven to 350°F and liberally grease four, 8-inch round pans.
3) Combine ingredients for your white cake mixture - do NOT mix in oil yet.
4) Blend spinach and oil in blender / food processor until smooth.
5) Add spinach and oil mixture into rest of the cake mix and mix until well blended.
6) Evenly divide cake mix into all four cake pans.
7) Bake at 350°F for 30-35 minutes or until toothpick inserted in center comes out clean.
8) Let cake cool in pans.
9) When cake is fully cooled, carefully remove one cake for the bottom layer of your Fantasy Forest Cake.
10) Spread thin layer of icing on top of your bottom cake layer and then carefully place 2nd cake layer. Repeat process with next cake layer.
11) After placing your 3rd and top cake layer, spread the rest of your icing evenly over the top and sides of your entire cake.
12) Crumble the 4th cake into pieces to make your “moss”.
13) Carefully place and gently push your “moss” cake crumbles onto the icing on top and sides of cake, completely covering the icing.
14) Add your marshmallow mushrooms anywhere you like on top, sides, or around base of your cake.
15) Let your entire Fantasy Forest Cake rest in the refrigerator overnight.
16) Serve and enjoy, along with an auditory pairing of your favorite Harp Twins album!
For the ICING:
Ingredients:
• 3 8oz packages of cream cheese
• 2 cups powdered/confectioners’ sugar
• 3 teaspoons almond extract
• 3 teaspoons vanilla extract
Directions:
1) Soften cream cheese to room temperature.
2) Use fork to stir powdered sugar, vanilla extract, and almond extract into cream cheese until fully mixed.
For the MARSHMALLOW “MUSHROOMS”:
Ingredients:
• Any size marshmallows
Instructions:
1) Cool marshmallows in freezer.
2) Heat non-stick cooking pan until very hot (do not use oil or cooking spray).
3) Use skewer or tongs to press marshmallow into heated pan until edges curl to desired look.
4) Remove marshmallow quickly from pan and skewer onto plate to let cool.
5) If desired, press a couple of red hots into heated top of marshmallow.
**Note: Making these mushroom marshmallows is a bit tricky and might require some experimentation.
