If you turn off read receipts in the Messenger settings, it should work. Give it a few minutes to take effect, and you should be able to read messages without being seen.
You're absolutely right. While you can't directly see if a message has been seen in a group chat, you can observe things like reactions, replies, or changes in conversation flow that might give you some clues.

If I turn it back on will it show people what I’ve seen? Or not until I open their chat again

Disadvantage of it is : in group / private message, you wont also able to see the message seen by others people.
