How to make Pork Ragu with Papardelle pasta!
Ingredients:
1 small can of tomato paste
2 medium cans of tomato sauce
1 package/tray of neckbones rinsed and cleaned (you can use short ribs or a meat of your choice)
Black pepper
All-purpose seasoning
2-3 Bay leaf
Rosemary
Thyme
Basil
2 stalks of celery washed and chopped into small pieces
1 c finely shredded carrots
1 medium onion chopped
Red bell chopped into small pieces
Yellow bell pepper chopped into small pieces
Orange bell pepper chopped into small pieces
Green bell pepper chopped into small pieces
½ c red wine
2 T Worcestershire sauce
½ c flour
3 T oil
2 T minced garlic
2 C chicken broth
1-2 T sugar
Pappardelle pasta
Instructions:
Heat the pot with oil.
Season both sides of meat and lightly dredge in flour. Sear each side of the meat until browned.
Remove from the pot and add all veggies and sauté until soft. Add in the tomato paste and cook 5 minutes.
Add wine and Worcestershire sauce and scrape brown bits on bottom of the pot.

Add the neckbones to the pot and add more broth or water to pot to cover meat.
Cover and cook on low 2-3 hours
Boils pasta according to package directions. Once meat sauce is done shred meat from the bones then add it to the sauce,.add most of the pasta and stir.
Turn on low 5 minutes then and then serve.
