  • Eva was born in Spain in the 70s and came to the United States as a teen to study abroad.
She immediately fell in love with everything the US had to offer and one of the first things she came to love most was American food!
For Eva, growing up in Spain in the 70s and 80s meant sticking to a meat and dairy-centric diet; however, she ate some fruits and vegetables and almost never ate junk food, fast or processed food.
In spite of not having had junk foods growing up, Eva's diet was not great as it also included lots of pastries, oils, fried foods and traditional foods which were heavy on fats, meats and dairy.
Eva found herself plagued by hormonal and other health issues around the time she hit her early forties, despite the fact she had started eating more fruits and vegetables and had been vegetarian and, unfortunately, a junk food vegan for some years.
During this challenging time, Eva's period would start and then go on to last 2-3 weeks of extremely heavy flow and twice was so weak from blood loss, she was told needed a blood transfusion. Eva's gynecologist put it all down to age and declared what she called peri- menopausal issues as “normal”. She went on to prescribe Hormonal Therapy, recommended a painful procedure to have the lining of her uterus scraped off followed by a hysterectomy if that treatment didn't yield the desired result. Eva declined, knowing deep inside there had to be another way to heal and that pills and surgery were just a quick fix that didn’t address the real cause of her troubles.
By Eva's early forties, she had also been suffering from extreme mood swings, bad breath, hair loss, body odor, acne, weakness and fatigue, on and off depression, anxiety, eye bags, extreme food addictions and an overall sense of just not feeling good no matter how long she slept or rested.
After years of trying this diet and that, Eva finally took charge of her own health when she found the Raw Food lifestyle after attending the Hippocrates Health Institute! What a transforming miracle raw foods brought on!
Eva has been a raw foodie consistently since 2014 and it has changed her whole outlook on life.

Thank you for this show, I get so tired of people saying if you’re not well in four months you’re not going to get well. I’ve heard of people that had horrible diseases that took a year and a half or more so thank you Eva for sharing it took you two years. 🥰

How wonderful to get to know Eva and hear her story :D such a lovely conversation and food :) fellow kindred spirit here, in terms of preferring long-form content - I am one of those technically younger people though, but I've always felt like I'm much older than I am so I guess it works out :) I totally agree, it stresses me out to watch shorter things - I prefer videos to be at least an hour xD so for me, your channel is absolutely perfect, Chef AJ :D thank you soooo much

I have a low/normal bmi but with large uterine fibroids I sometimes look 6 months pregnant. UGH….the mass feels so heavy and depressing at times. Only eating mostly raw keeps the intestines cleared and swelling down so the mass doesn’t feel “as big.”

My friend has breast cancer moved to her lymph node. She has a mass on her liver. It’s in her bones and her kidneys and her pelvis. She has been working in doing all the protocols for non-pharmaceutical. She’s a warrior and very strong and has done research after research after research. She is going to have vitamin C infusions. I’m not quite sure what all L she’s getting ready to try but she is a fighter. Wondering if it is too far gone for her to get help.
