Burns happen every day as a cook it comes with the territory if you're afraid of getting a little burn then you don't get in the kitchen literally "can't take the heat get out the kitchen"

This is like when you fry cireng in Indonesia, easily explode. The key so that the dough doesn't explode is to put the dough in oil but the heat hasn't turn on, and then slowly increase the heat
But the food will absorb more oil

When I tried it first time same thing happened to me then I tried coating it with corn starch and boom my problem solved
You can try fry it before the oil get hot. I mean really put the potato from the beginning, when the oil still room temp.
