I’ve been making vanilla for many years. I usually start using it at 1 year. It gets better all the time. I’ve never had any problems with molding. I have used vodka or rum as the alcohol. Both work very well, but are a little different. I like the rum based vanilla best. I like to give vanilla to friends who love to bake as a Christmas gift.

That is very interesting! Good vanilla is extremely expensive, we just don't get it out here and the best that I know of is from Mexico but the Latino stores here that sell stuff like that for a tiny little bottle is $20 whereas if you can buy those big bottles from Mexico it's way cheaper but of course I never get there so I rely on people who are going there for vacation to bring a big bottle back for me. I put a little splash in a special coffee that I make every morning and so it is like gold to me. But that's a long time to wait, 2 years! it would be an interesting experiment sometime. The bottles I get from Mexico have a little piece of actual vanilla bean in them as well. Thanks for sharing your recipe!

I know what I buy it for, and it’s not a weakness or addiction for me. After it’s cooked, there’s no harm in it, just a good taste and tenderizer. ❤️
