- One of the best parts about being a hunter is being able to create recipes from the harvest. The field to table life is something we really value. We like to experiment and change things up. Today we made Moose sausage done two ways. We made Jalapeño honey garlic and Italian. Both turned out amazing and will be used for the months to come.

Sausage are great with eggs for breakfast ,,sausage Pattie’s are also great with eggs I like Italian and chorizo ,home made of course ,,,

How much fat to moose are you using? Also is it beef fat or pork fat?
We do both and usually use 30-20 % fat depending on what we feel like.
Looks good, are you guys using a certain cut of the meat?
We use all the trimming for sausages. It’s the leftover meat after we butcher out all the roasts, steaks, stew meat.
How many lbs of meat for the ingredients.
Hmmmmm…. I can’t really remember to be honest. Sry I think it was around 25lbs total with meat and fat
