By Faith and Flour
2 cups fresh Cranberries
2 cups Flour, sifted
1 tbsp Baking Powder
1/2 tsp Salt
1 cup Sugar
1/2 cup coarsely chopped Pecans
1 cup Whole Milk
1 Egg
Zest of one Orange
1/4 cup melted Butter
1 1/2 cup shredded Cheddar Cheese
Preheat oven to 350 degrees F. Halve the cranberries. Sift together the flour, baking powder, salt and sugar. Add cranberries and pecans to the dry mixture, coating well. In a separate bowl, combine the milk, egg, orange zest and butter; add to the dry ingredients alternately with the cheese. Stir just to moisten the ingredients. Pour into a buttered loaf pan and bake for one hour.

3/4 cups Butter, melted
2 cups packed Brown Sugar
1 1/2 cups Flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
3 large Eggs
1 1/2 tsp Vanilla Extract
1 cup flaked, sweetened Coconut
1 cup chopped Pecans
Preheat oven to 350 degrees F. Grease and flour and 8x8 inch baking pan.
Heat the butter in a medium sauce pan over low heat until almost melted. Stir in the brown sugar. Increase the heat slightly; cook until just bubbly. Pour into a mixing bowl and allow it to cool for 5 minutes. In a separate bowl, sift the flour, baking powder and salt and set aside. With an electric mixer, beat the eggs into the sugar mixture one at a time. Add vanilla. Stir in the dry ingredients. Add coconut and pecans until blended. Pour into the baking pan and Bake 22-25 minutes until a toothpick inserted in the center comes out clean. Cool on a wire rack and cut with a plastic knife for best results. Enjoy!

I often bake an orange and cranberry bread, and I do exactly like you did: I take the time to halve the cranberries because they are really nicer in the bread this way, just the right bite size!

Hi Robin - I wish I could’ve been there helping you bake in your kitchen. That look like so much fun. I will definitely make that cranberry cheese bread. I can’t even imagine what that taste like but it sounds like it would be good and it looks so beautiful and festive. We plan to go to Melissa‘s in Dallas for Christmas. Normally we do it here and I go all out but my girls did not want me doing all that this year. Melissa will try to replicate everything we do here. Same menu etc. We will take the fresh shrimp from the Gulf of Mexico when we go. We always have fried shrimp for Christmas as you will remember. But I plan to do a little bit of baking to take with me and I think this cranberry cheese bread will be something everybody will love along with the regular stuff I always make. This was such a timely video, Robin. We are traveling to Hilton Head for Christmas and I've sort of had it in the back of my mind that I should do some Christmas baking & freezing to take with us. I made a list of what I'd like to bake while I was watching your video and you've nudged me into action. Now I'm thinking of all the other things that I can prepare ahead of time. Haha!

Everything looked delicious. I am most interested in the cranberry cheese bread. My foot pedal is arriving around the 8th. Hopefully, I am fast enough at typing. Found a metal house kit. The layout is ideal for us. It has an option for an extra fireplace in the master bedroom. There is a fireplace in the great room. We do get freezing temps in the Fall and Winter. My bedroom will fit everything my old one did. It has a canning pantry which is great since I plan to can some foods, vacuum seal some, and ferment some. It has two spare rooms for guests or an office. It allows us to choose the interior. Good as I know for sure I want a large and blue refrigerator and a butcher block counter.

I am glad you discovered Namaste perfect flour blend and like it too. I’ve been using it for years and have found I actually prefer it to regular flour when baking. I was so happy when I discovered it. They make a pizza crust that is also very good.

I’m going to try to make these. I have to see if we can get tinned pumpkin. Not ever used that before. And I need to double check what all purpose flour is in the UK I’m thinking plain flour but it might be what we call self raising. Easy to find out.
