  • SLOW COOKED, FORK TENDER STUFFED CAPSICUMS - just like little bundles of joy that you can whip up & serve a sick dinner like an absolute bo$$
    500grams of Beef Mince
    1 Bottle of Passata
    1 Brown Onion, Diced
    1 Tablespoon Tomato Paste
    1 Tablespoon Dried Oregano
    Olive oil
    1 Tablespoon Garlic Powder
    1 Tablespoon Paprika
    1 Tablespoon Chilli Flakes
    Salt & Pepper
    3 Bay Leaves
    1 Cup Water
    1 Cup cooked rice
    2 Cups of Spinach
    6 Small Capsicums, deseeded & with the tops cut off
    1/2 Block of Danish Fetta
    Pre heat oven to 180c
    Add in olive oil into a pan and cook the onion until translucent then add tomato paste + Oregano.
    Add beef & cook until browned, Simmer for 35 minutes but remember long and slow is always best so if you have the time slow and steady. Add in the spinach at the last minute and let it wilt.
    In a baking tray add 1 Cup of water & 1 Tablespoon of olive oil.
    Add in the Capsicums & fill them to the brim with the Bolognese sauce. When you reach the top sprinkle on Fetta & pop the tops back on. Bake these in the oven for two hours until the Capsicums are beautiful and fork tender. These are perfecto for meal prepping as well.
