    1 pound Italian sausage links (mild or hot)
    1 tablespoon olive oil
    1 large onion, sliced
    2 bell peppers, sliced (use a mix of red, green, and yellow for color)
    2 cloves garlic, minced
    1 can (14.5 ounces) diced tomatoes, undrained
    1 teaspoon Italian seasoning
    Salt and pepper to taste
    4 hoagie rolls
    1 1/2 cups shredded mozzarella cheese
    Optional: crushed red pepper flakes for extra heat
    Instructions:
    Cook the Sausage:
    In a large skillet, heat the olive oil over medium heat.
    Add the sausage links and cook until browned on all sides, about 5-7 minutes. Remove the sausages from the skillet and set aside.
    Cook the Vegetables:
    In the same skillet, add the sliced onion and bell peppers. Cook until the vegetables are tender, about 5-7 minutes.
    Add the minced garlic and cook for another 1-2 minutes until fragrant.
    Combine Ingredients:
    Slice the browned sausages into 1-inch pieces and return them to the skillet with the vegetables.
    Add the undrained diced tomatoes and Italian seasoning. Stir to combine.
    Season with salt, pepper, and optional crushed red pepper flakes to taste.
    Reduce the heat to low and simmer for about 10 minutes, allowing the flavors to meld together.
    Assemble the Hoagies:
    Preheat your oven to broil.
    Open the hoagie rolls and place them on a baking sheet.
    Evenly divide the sausage and pepper mixture among the hoagie rolls.
    Top each hoagie with shredded mozzarella cheese.
    Broil the Hoagies:
    Place the hoagies under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye on them to avoid burning.
    Serve:
    Remove the hoagies from the oven and let them cool slightly before serving.
