I've always wanted to learn exactly how to encrypt an individual field and thought others might want to know this as well. It turns out that it's very simple. What I later came to realize is that it's also a bit dangerous if you don't implement it with additional protection. For instance, you really need to find ways to protect the user from accidentally encrypting something twice as one example. And do you have procedures and processes in place on how best to handle the keys/passwords since there is NO way to ever recover encrypted data without the key/password?
