- These 3 recipes each have over gone viral with over 100Million views on TikTok, so have obviously been super interesting and curious to some - so, let's give them a go and see what they taste like!
Ingredients:
Decorative Focaccia Bread
1 sachet fast action yeast
250ml warm water
½ tsp honey
320g plain flour, plus more for kneading
Pinch salt
60ml Extra virgin olive oil
For the decoration:
3 spring onions
A handful chives
1 shallot, peeled and thinly sliced
2 peppers, sliced thinly
Fresh parsley, trimmed
A few pitted olives
Plus anything else you like - seeds etc
Brown Butter Toast
Sourdough bread slices
2tbsp Butter
Drizzle of honey to serve
Pinch of salt to serve
Smashed brussels sprouts
500g Brussels Sprouts, trimmed
2tbsp Olive oil
3 Cloves Garlic
Salt and pepper to season
60g Parmesan, grated

Apparently Barry likes his toast one step above charcoal. Pretty sure I heard that crunch over here in America.

Some of my customers like their English Muffins just short of charcoal too. I don't share their preference, but we make it for them.

I've done the pan fried toast and that was WAY WAY WAY too much butter 😬 it does taste good though
Video shows them adding the corner of a stick of butter. Barry cuts off the same amount and throws the main part in.
What that brown butter bread needs is some sausages, bacon, mushrooms, fried egg, beans, tomato, black pudding. Fried bread beats hash browns any day.
The first time I had a "full English" breakfast when I visited the UK, the bread was fried in the grease from the bacon and sausages. It had that amazing fried texture that you just got with the brown butter, but it was thicker bread, and it was nearly a sensory overload. "Once a year, and 2 slices, dear."
That's not toast, that's fried bread.
BTW tossing that left over brown butter was such a waste, you should have kept it to use later. There's a lot of things that will benefit from the flavour: from pancakes and granola, through pasta, meat and vegetables obviously but it's also great for baking - brownies (!), banana bread, apple cake, coffee cake, chocolate chip cookies, blueberry muffins, even bread.
Yeah, the tiko tok shows just a bit of butter, Barry WAAAAY over did it with the amount of butter.

Years and years ago when I first started really getting into baking, I had a subscription to bon appétit magazine in one month. It came out with a picture of a strawberry tart that looked delicious and I thought I could re-create it boy was I wrong mine looked absolutely nothing like the picture, it tasted great. It took watching a show on how photographers get those amazing shots of food, until I watch that show. I did not realize that sometimes they don’t even use real food in those shots. Take syrup for instants, they will use motor oil. As will they will use modeling chocolate or clay to make certain food items.
To be fair, what Barry ends up with couldn't really be called real food either.
Ive been making "brown butter toast" for ages apparently as a side for my sunny side up eggs (not nearly used as much butter as you had, Barry) where i cook the eggs in butter and theres usually a little bit left over once the eggs are done and i just stick some slices of bread in the pan to absorb it and crisp it up

My grandma in rural Germany grew up and lived on a farm for almost 30 years of her life, and she made the butter toast exactly the same. She told me this was eaten with ham and cheese on top during harvest season as a second breakfast, because "butter gives you strength." I think it will clog your arteries, but they had to work with what they had... and it's freaking delicious, to be honest. 😍

This is how I make my toast and bagels. I use not as much butter and i don't brown the butter. Try fried bread and bagels and you will never want regular toast/bagels again. 💜
Tip to level up your brown butter toast: Add in smoked paprika when the butter starts to brown.

I’m glad that you are using chives and peppers instead of using actual edible flowers like the tik tok showed. Rosanna passion did put edible flowers and she said it was disgusting and wasn’t even that pretty after she baked it.

There is a Roman dessert of bread cut into cubes, fried in olive oil until crispy and drizzled in honey, served warm. I substitued the olive oil for butter and oh my days. Tis good.

With the left over brown butter you should have whisked it up while in an ice bath for whipped brown butter
I always cook my brussels sprouts like that, it's so tasty. I learned it from my Father around 1975 so definitely pre-tiktok 😂
You forgot the salt on the focaccia. The whole point is salt,olives and rosemary

Hum I think you used a lot more butter then what was in the clip you showed. I haven’t gotten to the part where you taste it but I expect it will be to buttery! Not a bad taste because who doesn’t love butter but if you tried again with about 1 tablespoon of butter I think it would make a huge difference in the outcome!

I’ve been making toast like he did since I was a teenager. Instead of using salt and honey, I use just garlic powder on it.
