how come everything isn't clicking when you change the buffers and read from them at the same time? and why the very specific 8.5807 value on the mc.snapshots?

The two questions are related! The complex high frequency content greatly obscures the clicking. The 8.5807 makes the clicking occur at a frequency that’s in tune with the music - but it’s really only detectable when the wave becomes really simple (sine shapes).
