In South Africa, we have a similar recipe for making watermelon jam. We soak the rinds overnight in a solution of water and lime, or bicarbonate of soda, (baking soda), then rinse it thoroughly, and cook it in a sugar syrup, with added lemon juice and a few pieces of ginger, three to four cloves, and a couple of sticks of cinnamon. It is really delicious.

Yes if its made well. Once had some sickening over sugared and in white alcohol. Didn't like it much. Do you know how the watermellon sweetie cubes preserve is made? Confeit ? It then resembles a Turkish delight.
@@lydiawhitting5406 soak 2 kg of peeled and cubed rinds, in 3 litres (3quarts), with 2 - 3 tablespoons bicarbonate of soda/baking soda for 12 hours (overnight). Rinse rind, and soak in fresh water for 2 hours. Rinse the rind, and place in a pot of boiling water, and cook until tender, but still firm. While rind is boiling, prepare the syrup by adding 6 cups of sugar to 2 litres of water, together with the lemon juice and the spices (2 - 3 tablespoons lemon juice, 3-4 cloves, and 2- 3 sticks of cinnamon, a finger size piece of peeled ginger).Dissolve the sugar over a low heat, then bring syrup to the boil. Once the rinds are tender, drain and add them to the syrup. Boil rapidly, until tender and translucent. Remove the cloves and the cinnamon sticks and the ginger. Can the jam immediately. There is no alcohol in this recipe. However, this jam is very sweet, so feel free to reduce the sugar. This is a basic recipe for waatlemoen konfyt. It can be tweaked to your liking, but the rinds are basically preserved in a thick syrup. You can add more lemon juice, or more spices, such as nutmeg, or even a half to one teaspoon ground cinnamon, instead of cinnamon sticks. You can add a 1/8 - 1/4 teaspoon fine black pepper too. I like to add slightly more lemon juice, to take the edge off the sweetness of the jam.

I'm from Billings, Montana, USA. I make sweet pickled watermelon rind. My mom made them when I was growing up and I got the recipe from her. They are very good, they are sweet and tart. I put less sugar in then she did and I add lemon zest and sometimes I add fresh ginger slices.. Everybody loves them.

I'm from Roanoke Alabama and down here in the south we are over run with kudzu. Its climbing up and rambling on everything. I remember my grandmother taking kudzu blooms which by the way smells really good and are beautiful , but she would cook a big pan of them on the stove and would turn into a lavender colored jelly which was very good. We mostly ate it on hot buttered bisques.

My wife made this, years ago. We called pickled watermelon rind. I thought it was excellent. I love cloves and I also love pickled crab apples that are prepared very similar. Crab apples are about the size of ping pong balls.

My grandmother used to pickle the rind with hot peppers and baby onions. She would also blend it to make it with other vegetables to make a mash to fry.

This looks very much like my (Alabama/Southern USA) grandmother’s watermelon rind pickles. She used a different method…same ingredients but with vinegar instead of water.💕
I made maketaan jam in 2012 ( melon and ginger with pineapple) and just finished my last bottle. Tasted better than the day I made it.

Interesting. I put mine through the blender, strain(I give a little bit of the pulp to my dog everyday storing excess in portioned sizes in the freezer until needed) out the juice and walla you have watermelon juice which is really good for your health. You can add some fresh squeezed lemon if you wish. Great for the summer heat. As it is just me drinking it I freeze individual portions in used water bottles for later so it doesn't go bad.
