I think the thing with keto is finding the best pizza-pasta-potato facsimile “vehicle” [that you can] for toppings (sauce, cheese, butter, etc.).

Deli chicken actually makes a good pasta substitute. I mainly use it as a substitute for lasagna noodles but it can also be cut into strips and used as a fettuccine substitute.
I make it the same as a lasagna with noodles but just replace the noodles with sliced deli chicken. My lasagna recipe is: Bottom layer meat sauce Then a layer of deli meat A layer of Ricotta and spinach mixed with shredded mozzarella Layer of meat sauce A second layer of deli meat Meat sauce Cheese (Repeat layer if desired) Bake until cheese melts (about 20 minutes at 350) Of course this recipe can be modified however you prefer. If you want more veggies you can replace a layer of deli meat with a layer of zucchini.
This recipe is similar to one in the warrior made ‘keto cabs cookbook’ but they bake the pasta for 5 min at 350. I highly recommend the warrior made keto carbs cookbook the dessert one is also good. I also think that instead of putting the pasta in microwaved sauces you throw it in to hot sauce in a pan so it would cook the yolk you have in it.

The hearts of palm pasta at Trader Joe’s is pretty legit. The Costco here just got a canned hearts of palm pasta that’s okay, but not as good. The canned ones need a serious rinse because they are packed with citric acid. Better in a tomato sauce than a white sauce
I've done this but with unflavored collagen powder instead of gelatin and they turn out pretty good actually. I will try with gelatin to see if there is a difference.
Spiral sliced zucchini gently heated in some olive oil and used as a pasta substitute, in my opinion, tastes much much better than any traditional pasta or pasta substitute and is much less work.
Love these simple whole food recipes and always looking for a good noodle sub. I’m gonna try this tonight with xanthan gum in place of gelatin, and pray a bit.

I agree, especially the lasagna noodles. I'm able to make lasagna with them for my no-low-carb family and they love it and don't know I didn't use anything but regular pasta.
This is good for cold pasta dishes. Even the sauce can’t be too hot, they’ll melt. But try with a Italian dressing with fresh veggies, for a cold pasta salad.

Aldi’s store had white soybean spaghetti noodles. 20 g carb, 13 g fiber for net 7 g per serving. My husband and I don’t eat much so we never eat a full serving. Only 1 ingredient in them, which is organic soybean flour. They look about the same thickness as fettuccine noodles, same color as regular noodles, slightly shorter than a regular noodle. Best tasting noodle I have found. I’ve been back to the store numerous times, and they are not there. If they come back in, I’m buying lots of boxes.
I jumped in & made this pasta... I was so excited to finally use my beef gelatin lol The pasta is setting up in the fridge right now but my taste test was good. My boyfriend is making shrimp scampi tonight so I plan to toss it in the pasta, looking forward
This is a lot of steps for just faux pasta. I would probably just roughly chop up some cauliflower, steam cook it, then top it with a Bolognese sauce or chicken alfredo. And palmini noodles aren't too bad either for a pasta sub.

My noodles turned out beautiful it was so simple to make. The gelatin helped make it like noodles. As soon as we spooned the hot red sauce over the noodles we had a big bowl of melted mozzarella. 🤦🏻♀️
I used to make low carb pasta for my type 1 diabetic child. An ounce or so of softened cream cheese, add 2 room temperature egg whites and a bit of vital Wheat Gluten. Parmesan cheese and salt optional. Pour onto a sprayed Parchment paper on a cookie sheet, crimped up corners. Bake 5 minutes until firm, in low to moderate temperature oven. I have made this in a skillet on stove top too. Some people don't like gluten, could try it without. And I like sauces on my home grown Spaghetti squash, 5 minutes to microwave a one ring portion! I found it loses taste if not fresh cooked.

Hey Keto Konnect. You can boil this recipe below & it doesn't fall apart. Combine 1/2 a cup of Almond Flour, 1 tsp xantham gum & 1/2 tsp salt. Add 4 egg yolks. Stir & then kneed on coconut floured board until consistent. Add a sprinkle of coconut flour if to sticky. Roll into a ball. Cover with parchment. Roll out. Cut with pizza wheel. Boil & enjoy.

I don't think I'd go to that trouble for pasta that's just passable..? I prefer palminni hearts, or zoodle. The latest great tasting low carb pasta (3 net carbs) is the pasta by the name of Gnooda. It's order online only. It's marketed by the people that own the gnom-gnom website. It's excellent. Different shape though. I have cooked it in my instant pot, 4 min cook time, 5 mins wait time. Good chew, the primary ingredient is lupin flour. Check it out. You'll thank me later😉
I haven't tried making my own pasta yet, but wouldn't 1:3 Coconut flour and Almond Flour with 10% by weight of Vital Wheat Glutton and eggs not make a satisfactory base for pasta?

I used to make a low carb "pasta" for my type 1 diabetic child. I have made this on the stove top in large non- stick skillet too. Hope I didn't just give you a recipe you already had!
I wonder if you use silicone treated parchment if you can skip the 'spray the parchment' step? And can you leave the rolled out dough in refrigerator longer than 10 min? Is it detrimental?
Spaghetti squash works well for us too, i like how you show the fuck ups in the video however, it’s a lot more relatable compared to some of these cooking episodes on other channels where everything is perfect.
Watching recipes like this makes me realize just how nice it would be to be rich and have my own chef.

I rolled it too think so you could not separate long strands from the parchment paper without it breaking. That was really the only issue

Sadly Most citric acid is made from corn mold these days
In addition to rinsing, parboiling helps with white sauces
I don't mind palm hearts but I haven't ot regularly added them due to other animal habitats that are lost.

Instead of using the Gelatin, try Xanthan Gum, and you can boil the pasta for 1 minute, excellent :)

There is a lupin flour/ cream cheese pasta recipe on youtube that is pretty decent. You bake it too- so there is no cheese blob in the sauce.

For a “spaghetti” I use kelp noodles. The key is to soak them in hot water first. Softens then up instead of too crunchy
Soaking them in a mixture of water lemon and baking soda makes for an instant noodle form!

Try adding some konjac powder. The texture will be much more consistent.

Why are you using preshredded cheese? They usually add starch to prevent it from sticking, so it has more carbs than a brick.
Ugh we all know that and some people value the convenience (or have arthritis and can't shred it themselves etc.) Don't be that person dude.

Getting salmonella from uncooked eggs is very rare. Especially if the eggs are refrigerated.

We eat edamame noodles and they're pretty good! A little high on the carbs, but doable.
If you coated the cut noodles with something (parmesan?) Would it help them not stick and maybe allow them to be cooked?
Preshredded cheese is coated with flour to keep it separated.
I don't think I'd go to that trouble for pasta that's just passable..? I prefer palminni hearts, or zoodle. The latest great tasting low carb pasta (3 net carbs) is the pasta by the name of Gnooda. It's order online only. It's marketed by the people that own the gnom-gnom website. It's excellent. Different shape though. I have cooked it in my instant pot, 4 min cook time, 5 mins wait time. Good chew, the primary ingredient is lupin flour. Check it out. You'll thank me later😉

I haven't tried making my own pasta yet, but wouldn't 1:3 Coconut flour and Almond Flour with 10% by weight of Vital Wheat Glutton and eggs not make a satisfactory base for pasta?

Same here! The noodles looked great but a ball of melted cheese when the sauce was added. 🤦🏻♀️ looks like we aren’t the only ones with epic fail! 😂
Can you use any kind of gelatin or does it have to be beef gelatin?
Tried with agar agar, a Japanese plant gelatine and it came out more like pasta because it is a bit more firm than regular western gelatin
May I know how much agar powder to use for this proportion of ingredients

What about Vital Wheat Gluten pasta can we use that 🤔
I used to make a low carb "pasta" for my type 1 diabetic child. An ounce or so of softened cream cheese, add 2 room temperature egg whites (experiment with yolk too for different flavor) and a bit of vital Wheat Gluten, dried Parmesan cheese optional. Pour onto sprayed Parchment paper (crimped up corners) on a cookie sheet and bake in low to moderate temperature oven 5 minutes, just until firm. I have made this on the stove top in large non- stick skillet too. Hope I didn't just give you a recipe you already had!

I wonder if you use silicone treated parchment if you can skip the 'spray the parchment' step? And can you leave the rolled out dough in refrigerator longer than 10 min? Is it detrimental?
